How To make Basic Cornmeal Biscuit
2 cups Cornmeal
any color
1 1/2 cups Flour
1/4 teaspoon Salt
1 tablespoon Sugar
1 pinch Cayenne pepper
2 teaspoons Baking powder
1 teaspoon Baking soda
4 tablespoons Butter
1 Egg :
lightly beaten
1 1/4 cups Buttermilk
Spray shortening
Preheat oven to 425~. In a food processor or large bowl,mix 1 1/2 cups of the cornmeal with the flour, salt, sugar, cayenne pepper,baking powder and baking soda. Cut the butter into the dry ingredients until the whole mixture is the texture of cornmeal. Seperately mix the egg with the buttermilk,and stir all but 2 tbs.of this liquid into the dry mixture. Mix just enough to make a uniformly moistened dough. Dust a clean board with half the remaining cornmeal,and turn the dough out onto the floured surface.Sprinkle the top with the remaining cornmeal,and with flowered hands,gently push the dough into a circle about a 1/2" thick. Cut with a 2" or 3" biscuit cutter,and place bbiscuits close together on a greased cookie sheet.Brush top of the biscuits with the reserved buttermilk egg mixture.Bake in the preheated oven until puffed and brown,about 12 minutes.Cool for a few minutes before serving.Yields about 1 dozen biscuits.

What you need
1-1/2 cups bread flour
1 cup cornmeal flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon chipotle chilli pepper
1/2 cup cold butter
1 cup cold buttermilk **Make ButterMilk - add 1 tablespoon vinegar to 1 cup milk. Let stand 5 minutes**
What you need to do
Heat oven to 450°F.
Combine flour, cornmeal, sugar, baking powder, salt and chilli pepper in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Tip: place butter in freezer and grate to break down to make easier to blend with flour. Add buttermilk; stir until mixture is just combined. (If batter is too thin, stir in 1 to 2 tablespoons flour.)
Drop by 1/4 cupfuls, 1 inch apart, onto greased baking sheet.
Bake 12 minutes or until golden brown.
Note: Soft and flakey biscuits result when the dough is not over mixed. Combine the wet and dry ingredients only until the mixture holds together to avoid a tough texture. To make softer, fluffier biscuits, place the dough closer together on the baking sheet. If you prefer crustier biscuits, place biscuits 2 inches apart on the baking sheet. Also note batter/dough bakes better when it is kept cold, if you feel the butter and milk has warmed up place in fridge to make cold.

makes 12 biscuits...bake 12 minutes in 425 degree oven.

Preheat oven to 350ºF. Melt the butter and then remove from the heat source. Mix the remaining ingredients together in with the melted butter. Bake for 6-8 minutes. Enjoy!
