CREPE RECIPE
Ingredients
1 Cup / 125g Flour
½ tsp Salt
2 Eggs
1¼ Cups | 310ml Milk
2 tbsp Melted Butter + extra for cooking
Instructions
In a medium sized mixing bowl combine the flour and salt together with a whisk.
In a seperate smaller mixing bowl whisk together the eggs and milk.
Pour the wet ingredients into the bowl with the dry ingredients, a ¼ at a time, whisking together until smooth.
Pour the melted butter into the crepe batter and whisk until combined.
Cover the crepe batter with plastic wrap and leave in the fridge to rest overnight or if limited for time 1 hour.
Heat a large frying pan or crepe pan over medium heat. Grease the pan with melted butter and pour in about a ¼ cup of crepe batter. Use a crepe tool or tip the pan around to spread the batter evenly.
Cook the crepe for 30 seconds to a minute or until the top has set, flip the crepe using a spatula and your hands and cook for a further 30 seconds on the remaining side.
Serve your crepes filled with your favourite filling.

HOW TO MAKE CREPES
INGREDIENTS:
3 X large fresh eggs
3 table spoon of sifted flour (you may need to add more as you go so keep some extra flour handy)
A pinch of table salt
Extra virgin olive oil
3 egg shells filled with water
METHOD:
1. Using one egg, crack open the top only so that just a small part of the egg shell breaks.
2. Pour the egg into the mixing bowl and put the larger piece of the egg shell to the side to use later on.
3. Crack open the other eggs as you normally would and add them to the bowl.
4. Using your whisk, best the eggs as much as you possibly can, for at least 5 minutes.
5. You should notice small bubbles form on top of the eggs.
6. Get the egg shell which you put aside earlier, and wash it out.
7. Fill the egg shell with water and add this to your eggs. Repeat 4 times.
8. Mix your eggs once again.
9. Add a generous pinch of table salt.
10. Mix once again for another 3 minutes!
11. Add a portion of the flour and mix well.
12. You will need to judge the texture as it needs to be nice and smooth without being runny. It has to have an element of density to it.
13. The amount of flour you need will be based on the size of the egg you use and also the freshness as in Italy, I used to use farm fresh eggs and they were huge!
14. Using a large deep spoon, scoop up the mixture and pour it back in, to see if you are happy with the result.

I know you’ve had Lasagna but have you had crepe lasagna rolls? My moms meat filled crepes with bechamel sauce and cheese are what lasagna dreams are made of. This savory crepe recipe is so good and you probably won’t be able to tell that they’re not made with actual lasagna sheets. This recipe was the best experiment and accidentally made by my mom right before Christmas. She went out to find cannelloni in Bulgaria but didn’t have any luck. She thought she could try using crepes, rolling them with meat and cheese and assembling similarly to lasagna. Little did she know, this was one of the tastiest meals she had ever made. Mom immediately called me raving about it and here we are now making it for the page.
INGREDIENTS
The Crepes – you can use any recipe you like
1 ⅓ cups milk I used 2% but any will work
1 cup water
5 tablespoons melted butter cooled down
2 cups all-purpose flour
The Bechamel Sauce
3.5 tablespoons butter (50 grams)
½ cup flour (50 grams)
2 cups milk (500ml)
salt to taste we added a pinch
The Meat Filling
2 tablespoons olive oil or any
1 finely diced onion
1 finely diced carrot optional
2 minced garlic cloves
600 grams ground meat of choice we used pork, you can use beef or any
1 tablespoon tomato paste
1 teaspoon of each spice (dry oregano, paprika, salt)
1 tablespoon all-purpose flour
½ cup unsalted veggie broth or any you like
1 tablespoon of mozzarella in each crepe when rolling with the meat
Additional Ingredients
1 cup tomato sauce or marinara we used homemade sugo
¼ cup grated Parmigiano Reggiano cheese measure with your heart
½ cup additional grated mozzarella on top measure with your heart

SERVES 3 - 6 ROLLED FILLED CREPES
INGREDIENTS :
MANICOTTI SAUCE :
1 tbsp olive oil
2 garlic cloves , minced
1/2 onion , finely chopped
1 carrot , small, finely chopped
1 celery rib , finely chopped
400g / 28oz crushed tomato , canned
1 cup (250ml) water
1 chicken cube stock
1/4 tsp dried thyme
1/4 tsp dried oregano
1/2 tsp black pepper
1/2 tsp sugar
salt if needed
1/4 tsp chilli flakes , optional
CREPES BATTER :
2 eggs
1/2 cup water
1/4 tsp salt
1/2 cup all-purpose flour
SPINACH BEEF FILLING:
1 tbsp olive oil
2 garlic cloves , minced
1/2 onion , finely chopped
250g ground beef
125g spinach leaves, chopped
1 beef bouillon cube , crumbled
1/2 tsp pepper
1 tsp Worcestershire Sauce
1/2 cup of manicotti sauce
