How To make Basic Buttermilk Biscuits
3 1/2 cups Flour
1 teaspoon Salt
1 tablespoon Sugar
4 teaspoons Baking powder
1 teaspoon Baking soda
4 tablespoons Butter
2 Eggs -- lightly beaten
1 1/2 cups Buttermilk
Spray shortening and corn- Meal for coating pan
Preheat oven to 400~. In a food processor or a large bowl,mix 3 cups of the flour with salt,sugar,baking powder and baking soda. Cut the butter into the dry ingredients until the mixture is textured like cornmeal. Separately mix the eggs with the buttermilk,and stir all but 2 tbs.of this liquid into the dry mixture. Mix just enough to make a uniformly moistened dough. Dust a clean work surface with 1/2 the remaining flour,and turn the dough out onto the floured surface. Sprinkle the top with the rest of the flour,and with floured hands,gently push the dough into a circle about 1/2" thick.. Cut with a 2" or 3 " biscuit cutter,and place buscuits close together on a grease and cormeal coated cookie sheet. You will get about 12 biscuits. Brush the tops of the biscuits with the reserved buttermilk egg mixture. Bake in the preheated oven until puffed and brown,about 15 minutes .Cool for a few minutes before serving.

BISCUIT RECIPE | EASY BUTTERMILK BISCUITS
Today I'll be sharing my grandmother's recipe for southern buttermilk biscuits. These are easy to make and use only 3 ingredients. My granny showed me how to make these when I was a little girl and I make them today to remember her. I hope you enjoy!

Granny’s Biscuits
Ingredients:
2 cups of self-rising flour (plus some bench flour)
¼ cup of lard (or you can use shortening or chilled, cubed butter)
2/3-3/4 cup of buttermilk
Directions
Preheat your oven to 450 degrees. Grease a cast iron skillet or cake pan. In a medium mixing bowl, sift flour into bowl. Using a pastry cutter or fork, cut the lard into the flour until lard is the size of small peas. Make a well in the flour. Add in buttermilk, a little at a time, until flour is no longer dry. Be careful not to add too much liquid, you don’t want your dough to be too wet. Set dough aside. Sprinkle flour on a clean countertop. Add biscuit dough. Sprinkle a little flour on your hands. Gently knead the dough 8-10 times, being careful not to overwork your dough. Pat the dough out with your hands until the dough is as thick as you want your biscuits to be. Cut your biscuits out using a biscuit cutter or glass, lifting the cutter straight up and down. Place biscuits in your greased baking dish. If there’s remaining dough, work the dough back together, pat back out, cut out additional biscuits, and continue until there is no remaining dough. Bake for about 15 minutes, or until biscuits are browned to your liking.

2 CUPS SELF-RISING FLOUR (WHITE LILY)
1 PINCH BAKING SODA
3/4 -1 CUP WHOLE BUTTERMILK
1/4 CUP CRISCO SHORTENING
Blend Crisco and flour together with pastry blender, blending fork or with regular fork until shortening is pea sized. Add a dash of soda and mix well. Add buttermilk a little at a time until all flour is wet. Just until blended not runny at all. Note: Amount of buttermilk can vary depending on type you buy. Some are thin while others are thick. Sift flour out on counter and put out dough. Sift flour on top then knead 7-10 times. Pat dough about as high as biscuit cutter (3/4 to 1 inch high). Cut out biscuits and place in pan greased with shortening. Take buttermilk and pat tops of biscuits- bake at 450 degrees for 20 minutes. When done flip upside down to keep bottoms from sweating. Enjoy!
