How To make Barley Stuffed Green Peppers
1 tb Vegetable oil
2 c Mushrooms, chopped
1 c Onions,chopped
1 1/2 c Pearl barley, cooked
2 tb Parsley,chopped
1/4 ts Thyme
1/4 ts Pepper
1 c Monterey jack,shredded
4 md Bell peppers
1 c Marinara sauce
Preheat oven to 350F. Heat the oil in a large skillet. Add mushrooms and onions and cook, stirring until the onions are browned. Stir in the barley, parsley, thyme and pepper(ground). Stir in the cheese; set aside. Rinse the bell peppers. Cut off the tops; remove and discard the seeds and pith. If necessary, make a thin slice on the bottom of each pepper to balance. Spoon 1/4 of the mixture into each pepper. Stand the peppers upright in a baking dish just large enough to accommodate them. Pour the saice into the baking dish. Bake 30 minutes or until the peppers are tender. ~--

Today's recipe is one of my husband's favorites. I have mentioned before how he is such a meat and potatoes guy and the only way he will eat soup is if it's thick and hearty. Well, this soup fits the bill- it's loaded! But I love it because it's loaded with good things and you can add even more vegetables if you'd like.

Stuffed Bell Peppers Ingredients – Servings 6
- Bell peppers (6)
- 1 yellow onion, diced
- 2 cloves of garlic, minced
- 1 lb of lean ground beef
- 1 cup of cooked white rice
- 1 tsp salt
- ½ tsp pepper
- 1 tsp Italian mix seasoning
- ¼ cup of plain breadcrumbs
- ¼ cup of parmesan cheese
- 1 large egg
- 1 cup of marinara sauce or pasta sauce
Sauce at bottom of casserole dish
- 2 cup of marinara sauce or pasta sauce
- ½ cup water
Topping
- ½ cup mozzarella cheese for topping
