How To make Barbecued Chicken2
4 lg Chicken leg quarters
BARBECUE SAUCE 6 tb Vegetable oil
1 Onion
finely chopped
1 cl Garlic :
crushed
8 oz Can tomatoes
1 tb Ketchup
1 tb Chutney
1 tb Vinegar
1/2 c Chicken broth or water
1 tb Worcestershire sauce
1 t Dijon mustard
1 t Paprika
1/2 Lemon, juice and rind of
2 ts Brown sugar
1 tb Parsley -- finely chopped
1 Bay leaf
Salt and pepper to taste
Wash chicken and pat dry. Heat oil in saucepan. Add onion and garlic and saute for 5 minutes. Add remaining ingredients except chicken. Simmer 20-30 minutes. Strain and set aside to cool. With a sharp knife, make small cuts in chicken pieces. Spoon cooled barbecue sauce over chicken and let stand for at least 1/2 hour. Heat broiler or grill. Cook about 30-45 minutes, depending on size of chicken pieces.
Baste frequently with barbecue sauce. Test for doneness by pricking chicken with skewer; if juice runs clear, chicken is done. Heat remaining sauce and serve separately. Pollo asado is one of my all time favorite foods to eat. As a matter of fact I don’t know ANYONE who doesn’t love a perfectly cooked pollo asado. And in this video we’re gonna show you how most restaurants cook it and my favorite way to cook it in the backyard. We’re gonna spatchcock two birds – one with and one without the backbone and we’re also going to split one bird in half, which is the traditional Texas style pollo asado.
Now here’s a pro tip – the secret to perfect cooking is fire control, especially in open fire cooking. And the second pro tip – always use a meat thermometer for perfect, juicy chicken. Don’t listen to the keyboard haters that say they don’t need a meat thermometer for perfect cooking, the reason they’re typing is because they’re still chewing their overcooked dried out chicken! As long as you have a good recipe, good cooking technique and fire, your family and friends will love your barbecue. Now let’s get fired up and grill some pollo asado.

Grilled Asian Chicken
2 - 3 lbs Boneless Chicken Breasts - halved
1/3 C Light Soy Sauce
2 Tbsp Honey
1/4 tsp Red Pepper Flakes
4 tsp Sesame Oil
3 - 4 Cloves Garlic - crushed
Place chicken in shallow dish or zip lock bag.
In a small bowl mix soy sauce, honey, sesame oil, red pepper flakes & garlic, microwave for 30 seconds.
Pour over chicken. Marinate for 15 minutes.
Drain marinade and simmer in a small pot for 5 minutes.
Grill chicken approx 4 - 5 minutes per side basting frquently with the marinade.

2 1/2 pounds chicken thighs
1/2 cup plain yogurt
5 garlic cloves minced
1 tbsp coriander powder

1 tbsp onion powder
1 tbsp smoked paprika
Juice of 1 lemon 2 tbsp
1/4 cup olive oil
2 tsp salt

Yogurt sauce
1 cup plain yogurt
3/4 cup grated and salted cucumber
2 medium garlic cloves salted and pureed
1/2 cup finely chopped cilantro
1/2 tsp coriander seed
1/2 tsp cumin seed
Serve with:
Flatbreads
Red onion
Tomato
Crunchy lettuce
Sauce
Spicy sauce
