How To make Bang Bang Chicken
4 boned and skinned chicken breasts
1 pint chicken stock
1 carrot
2 spring onions
1/4 cucumber
2 tablespoons sesame seeds -- lightly toasted
for the sauce: 6 ounces smooth peanut butter
2 teaspoons chilli sauce
2 teaspoons brown sugar
2 tablespoons sesame oil
2 tablespoons vegetable oil
To make the sauce, put the peanut butter into a bowl and place over boiling water for 10 minutes to soften. Remove from the heat and whisk in the chilli sauce and sugar. Gradually, add both the oils until the sauce is the right consistency for pouring - depending on the peanut butter, you may not need all the oil. Poach the chicken breasts for about 10 minutes (until cooked through) in the stock, then drain and cool. Then cut into 1 inch shreds and put to one side. Peel the carrot and cut into shreds, also about 1 inch long, then cut the spring onions to the same size, using the green and the white. Cut the cucumber into 1 inch lengths, leaving the skin on. Thinly slice lengthways and cut into matchstick shapes, discarding the seeds. Arrange the vegetables on a serving dish and pile the chicken on top. Bang Bang Chicken 棒棒鸡 - How to prepare in 3 quick steps
The term Bang Bang Chicken has caught my attention many times but only realized that it's 棒棒鸡 in Chinese recently.
Although Bang Bang chicken is an authentic Sichuan cuisine, the translation Bang Bang Chicken also refers to an Americanised version, which is deep-fried chicken dredged in the mayonnaise-based sauce.
In this article, I will develop the recipe close to the traditional Bang Bang Chicken served across Asia. The chicken is poached and dresses with a mixture of soy sauce, vinegar, sesame paste, and chili oil. Astonishingly, it had evolved so drastically after ricocheted around the world and ended up morphing into a deep-fried chicken with mayonnaise.
RECIPE

Ingredients A (Poach the chicken)
600g chicken thigh meat
4 slices of ginger
1 tablespoon of rice wine
1 stalk of scallion
1 Japanese cucumber
Ingredients B (For the sauce)
1 tbsp (2 tsp?) sesame paste
2 tbsp light soy sauce
1 tbsp black vinegar
2 tbsp chili oil
1tsp sugar
Ingredients C (Garnish)
1 stalk shredded scallion
1 tbsp red chili strips
1 tsp white sesame
Method :
- Bring a pot of water to boil.
- Add some ginger slices and scallion sections.
- Add some rice wine to remove the unwanted smell of chicken, particularly if you use frozen chicken.
- Add a few Sichuan peppercorns.
- Then poach the chicken thigh in boiling water over low heat for twenty minutes.
- After twenty minutes, remove from heat. Leave the chicken in the water to let it cool to room temperature.
- Julianne some Japanese cucumber and place it on a serving plate.
- Beat the meat with a wooden baton until the meat loosens.
- Remove the skin. Cut into fine strips.
- Remove the meat from the bone, shred into small strips.
- Place the shredded chicken meat and skin on top of the cucumber.
- Drizzle the sauce on top of the chicken.
- Add some white sesame on top.

3 chicken breasts
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon seasoned salt

——bang bang sauce——
1 cup mayonnaise
1/2 cup sweet chili sauce
2 tablespoon chili garlic sauce or Sriracha
:
1. Score the chicken breasts about 1/8-inch deep and 1/2-inch apart. Make cross-hatch cuts. Mix all the spices together (garlic powder, onion powder, paprika, seasoned salt) and season the chicken breasts on both sides.
2. Make the bang bang sauce - mix together the Mayo, sweet chili sauce and chili garlic sauce or sriracha. Make sure you reserve about a couple tablespoons of the sauce for drizzling on top when serving the dish.
3. Place the chicken breasts in the air fryer basket and spread about 2 tablespoons of the bang bang sauce on top, then air fry at 390° for about 20 minutes depending on the size of the chicken breasts or until the internal temperature hits 165 degrees.
4. Once done let the chicken rest for about 10 minutes , then serve over white rice drizzle with the reserved bang bang sauce, garnish with some cilantro or green onions and enjoy.
