Banana Split Cheesecake Squares Recipe | RadaCutlery.com
Kristi at the Rada kitchen demonstrates how to make banana split cheesecake squares dessert. This dessert is a joy of cheesecake and banana split in one. This recipe is simple and a great dessert for any party or event. Top the whole dessert with fruit or individually top the dessert. Check out the other recipes on Rada's blog.
Video Transcript:
Hi Kristi at the Rada kitchen and today we are going to make a recipe out of our cookbook called 101 recipes for bananas. Today I am going to make banana split cheesecake squares. The ingredients you will need to make the banana split cheesecake is three eight ounces packages of cream cheese soften. Two cups of graham cracker crumbs; that's about fourteen whole graham crackers that have been crushed. A third cup of margarine or butter melted. Teaspoon of vanilla. A cup of sugar that we will divide later.
Three eggs; and a half cup of mashed bananas. Then for later decoration we will need a cup of halved strawberries. A banana that we are going to toss with lemon juice and some chunked pineapple. The first thing we want to do is mix the crushed graham cracker with the butter. Now to crush graham crackers I put them in a Ziploc bag and I take the rolling pin and crush them up. To your crushed graham crackers you are going to add the third cup melted butter.
To the graham cracker and butter mix, you are going to add a fourth cup of the cup of sugar. On the recipe is says sugar divided and that is what it means you are not going to use the whole cup at once. So to this we are going to add a fourth of cup. Now we are going to put our crumbs into a 9x13 baking pan. Then you want to press it into the bottom of the pan. Now we have our graham cracker crust pressed into our 9x13 pan. I have my oven preheating to 350 degrees.
Now we are going to make the cheesecake filling. In a mixer we will add the three eight ounces packages of cream cheese and then you are going to add the rest of your sugar, three fourths cup and teaspoon of vanilla. We are going to mix that so it is mixed well. Now we are going to add our three eggs. I like to add them one at a time to just gradually well blended not over beat.
Now to make it a banana split we are going to add our half cup of mashed bananas. Really ripe bananas work best when you have to mash them for recipes like that. Alright now we will mix these in. Once the bananas are all blended in we are going to add that into our pan with the graham cracker crust. Now you will put this in the oven at 350 for thirty minutes until the center is almost set.
So my cheesecake is baked, I let it cool. I put it into the refrigerator for 3 hours or over night. I am going to put the toppings on. You can put all the toppings over the whole cake or you can do like what I am going to do like an individual slice. So first you will need is a banana that is sliced. To keep the bananas from getting brown I am going to put them in a bowl with some lemon juice. Set that aside. I am going to put some fresh pineapple.
I am going to use the French Chef knife. It cuts the top off easily, cut the bottom off. Slice it in half. Now pineapple has a hard core in the middle that you do not want to eat so what I am going to do is cut the half into three. Then I am going to cut down the core, make sure you get all the core out. Then I am going to go around, lay it down and cut off the outside. I had to go half way through then go the other half.
That's kind of how big you want the pieces. Then there's your cut up pineapple. Then I am going to slice some strawberries. So what you could do is put this over your whole cheesecake or you can do individual slices. First do the wipe cream, banana, couple slices pineapple, a strawberry slice and you can top it off with a cherry.
Then you can top it off with some chocolate syrup. That is the banana split cheesecake. The recipe is in the 101 Recipes Using Bananas cookbook. Has everything from appetizers, beverages, main dishes and desserts.
