TASTE OF HOME 4/5/94:
2 Eggs; separated
2/3 c Shortening
1 1/2 c Sugar
1 c Mashed ripe bananas (2 to 3
Medium) 1 1/2 c All-purpose flour
1 ts Baking soda
1/4 c Sour milk*
1/2 ts Vanilla extract
1/2 c Chopped walnuts, optional
Whipped cream and sliced Bananas; optional In a small mixing bowl, beat egg whites until soft peaks form; set aside. In a large mixing bowl, cream shortening and sugar. Beat in egg yolks; mix well. Add bananas. Combine flour and baking soda; add to creamed mixture alternately with milk, beating well after each addition. Add vanilla. Fold in egg whites. Fold in nuts if desired. Pour into a greased 13x9x2" baking pan. Bake at 350 degrees for 45-50 minutes. Cool on a wire rack. If desired, garnish with a dollop of whipped cream and a few banana slices. * = To sour milk, place 1 tsp. white vinegar in a measuring cup. THE BARS
- 2 cups flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup butter, room temperature
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1 teaspoon vanilla
- 1 cup mashed banana
- 1 egg
- 2 cups chocolate chips (I prefer the miniature variety for even distribution)
Cream together the butter and sugars until light and fluffy. Add vanilla, egg, and banana and beat to combine.
Add dry ingredients and mix until completely incorporated with no clumps of dry flour. Finally, fold in the chocolate chips.
Pour into a greased 10 x 15 baking pan and place in a preheated 350-degree oven for 30-40 minutes. A toothpick will come out clean when inserted into the middle of bars.
Let cool completely before icing.
THE FROSTING
- 8 ounces cream cheese, room temperature
- 1 stick butter, room temperature
- 1 teaspoon vanilla
- 2 cups powdered sugar
Beat cream cheese and butter until light and fluffy. Add vanilla and sifted powdered sugar. You may need to add more or less sugar to achieve the consistency you desire. Beat to completely combine and spread on cooled bars!

Ingredients:
For the cake:
120g Rolled oats
1 cup (240ml) Milk, hot
2 Ripe Bananas (200g)
2 Eggs
3 tablespoons Cocoa powder
1 teaspoon Baking powder
For topping:
100g Dark chocolate
1/4 cup (60ml) Milk
Nuts of choice
Directions:
1. Make the cake: Preheat oven to 180C (350F). Grease a 8-inch (20cm) round pan and set aside.
2. In a large bowl, place rolled oats, pour in milk and allow to soak for 15 minutes.
3. In a separate bowl, mash bananas, add eggs and whisk until combined. Add cocoa powder, baking powder and mix until combined. At this stage you can add sweetener to make the cake a bit sweeter.
4. Pour soaked oats into the bowl with mashed bananas and mix until combined.
5. Pour the batter to prepared pan and bake for 25-30 minutes or until
6. Allow to cool for 5 minutes, then release from the pan and allow to cool completely.
7. Make the topping: chop the chocolate and transfer into a heatproof bowl. pour in hot milk, allow to sit for 1-2 minutes and mix until melted and smooth. Drizzle the chocolate over the cake.
8. Chop the nuts and sprinkle over the cake.
9. Serve and enjoy!
Healthy Banana Bars Recipe
This recipe is about making a healthy Banana bars. We are not using any refined flour, just some oats and whole wheat flour. Overripe Banana's add a lot of natural sweetness, but if its enough for you then a 1/4 cup brown sugar can be omitted. Bananas and chocolate go well together. Prep time will only 10-15 minutes.
This will be an excellent breakfast bar just to start your day on a healthy note!! or can be an afternoon snack or just to satisfy your sweet tooth. This is a very kid friendly recipe.
