▶️ RECIPE INGREDIENTS: (6 medium size muffins)
170g / 1 Cup Whole wheat flour
60g / 1/3 Coconut Sugar or Palm sugar (if you like it sweeter you can add 1/2 cup instead)
1 Teaspoon Baking powder
1/4 Teaspoon Baking soda
1/4 Teaspoon Salt (I have added pink Himalayan salt)
350g / 1+1/4 cup Mashed Banana
4 Tablespoon Olive oil
1 Tablespoon Ground Flaxseed
3 Tablespoon Water
1 Tablespoon White Vinegar
1 Tablespoon Vanilla extract
[Note for Non-Vegans: 1 Tbsp Ground Flaxseed + 3 Tbsp Water = 1 egg replacement]
Toppings:
Walnuts - chopped or nuts/seeds of choice
Semi-Sweet Chocolate Chips
▶️ 6 cup Muffin Tray

▶️METHOD:
Preheat the oven to 350F. Brush a 6 cup muffin tray with oil OR line it with muffin paper liners and set aside for later.
Add the whole wheat flour, coconut sugar. Baking powder, baking soda, salt to a bowl and mix it thoroughly. Set is aside. Now to another bowl, mash the banana and add olive oil, ground flaxseed, white vinegar, vanilla extract, water and mix it well until combined thoroughly. Now add the dry ingredients and mix it gently until just combined. (Please DO NOT over mix it, otherwise the muffins will turn out dense).
Scoop the batter into the muffin cups and top it with chopped walnuts/ semi-sweet or dark chocolate chips. Bake in a 350F preheated oven for about 35 minutes. The baking time depends on the heat/type of your oven so adjust the baking time accordingly. Once baked remove it from the oven and let it cool down. Enjoy it for breakfast or just as a healthy snack.
These muffins freeze very well and are perfect for meal planning.

BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

I've created this low calorie banana bread recipe after so many requests. This tastes just like regular banana bread but the only difference is that in the calories. The regular banana bread slice has 200 calories while this version has only 58 Calories per slice.

Traditionally, banana bread can be unhealthy with a high amount of sugar and butter. So I’ve created my own healthy version without using any added sugars or butter, still keeping a beautiful flavour and moist texture. This recipe is now a regular in my house, and I’m sure it will be in your home too ????

Free Keto Meal Plan For Beginners
1. Water
Drink 8 to 12 cups of water daily.
2. Dark Green Vegetables
Eat dark green vegetables at least three to four times a week. Good options include broccoli, peppers, brussel sprouts and leafy greens like kale and spinach.
3. Whole Grains
Eat whole grains sat least two or three times daily. Look for whole wheat flour, rye, oatmeal, barley, amaranth, quinoa or a multigrain. A good source of fiber has 3 to 4 grams of fiber per serving. A great source has 5 or more grams of fiber per serving.
4. Beans and Lentils
Try to eat a bean-based meal at least once a week. Try to add legumes, including beans and lentils, to soups, stews, casseroles, salads and dips or eat them plain.
5. Fish
Try to eat two to three serving of fish a week. A serving consists of 3 to 4 ounces of cooked fish. Good choices are salmon, trout, herring, bluefish, sardines and tuna.
6. Berries
Include two to four servings of fruit in your diet each day. Try to eat berries such as raspberries, blueberries, blackberries and strawberries.
7. Winter Squash
Eat butternut and acorn squash as well as other richly pigmented dark orange and green colored vegetables like sweet potato, cantaloupe and mango.
8. Soy
25 grams of soy protein a day is recommended as part of a low-fat diet to help lower cholesterol levels. Try tofu, soy milk, edamame soybeans, tempeh and texturized vegetable protein (TVP).
9. Flaxseed, Nuts and Seeds
Add 1 to 2 tablespoons of ground flaxseed or other seeds to food each day or include a moderate amount of nuts – 1/4 cup – in your daily diet.
10. Organic Yogurt
Men and women between 19 and 50 years of age need 1000 milligrams of calcium a day and 1200 milligrams if 50 or older. Eat calcium-rich foods such as nonfat or low-fat dairy products three to four times a day. Include organic choices.
Strawberries top the list, followed by spinach. (The full 2019 Dirty Dozen list, ranked from most contaminated to least, include strawberries, spinach, kale, nectarines, apples, grapes, peaches, cherries, pears, tomatoes, celery and potatoes.
