Ingredients 3 each mashed bananas 1 1/2 cup sugar 1/2 cup oil 1 each egg 1/4 cup milk 1 1/2 cup flour 1 teaspoon baking soda 1/2 cup walnuts (optional)
Directions: Mix together in order given. Pour into lightly greased and floured oblong or small loaf pans. Bake at 350 degrees for 30 to 35 minutes.

Kevin's Mom passed away on December 28, 2021. In honor of her memory, I decided to share with you all her most requested recipe for Banana Nut Cake.
Recipe: 2 1/2 c. flour 1 2/3 c. sugar 1 1/4 t. baking powder 1 1/4 t. baking soda 1 t. salt 2/3 c. shortening 1/3 c. milk 2 eggs 3 ripe bananas chopped nits (optional)
Preheat oven at 350 degrees. Stir in all dry ingredients. Add the rest of the ingredients. Mix well. Pour into a greased cake pan. Bake for 30-35 minutes or until toothpick comes out clean. Cool and frost.
Frosting: 1/2 c. butter 1/2 c. shortening 4 c. powdered sugar 1 t. vanilla 1-3 T. milk or water Beat until smooth. Frost cooled cake.

Net weight of cake : Approx. 750 grams -----
Banana (ripe) - 03 medium or large All-purpose flour/Maida - 150 grams Baking powder - 1 tsp Baking soda - 1/4 tsp Cinnamon powder - 1 tsp Butter - 125 grams (I used salted. Unsalted butter is also fine) Sugar - 150 grams (use either brown sugar or castor sugar) Eggs - 03 whole Vanilla essence - 1/2 tsp Walnuts - 1/2 cup chopped Raisins - 2 to 3 tbsp (or as required) (optional)
Transfer the batter into a loaf tin lined with parchment paper. Bake in a moderately hot oven at 180 deg C for 40 to 45 minutes or until a skewer inserted comes out clean.
