BETH’S ULTIMATE BANANA BREAD
Makes 1 loaf
*PRINT RECIPE HERE*
INGREDIENTS:
4 overly ripe, mashed bananas
3 eggs
3/4 cup (180 ml) of canola oil
¼ cup (60 ml) of water
½ cup (100g) of sugar *I find this is enough sugar if adding the chocolate chips but if you have a sweet tooth I would increase it to 3/4 cup (150g)
1 tbsp (15 ml) vanilla
2 ½ cups (300 g) of flour
1/2 teaspoon (5 ml) salt
2 teaspoons (10 ml) baking soda
½ cup (75 g) of bittersweet chocolate, chopped
½ cup (75 g) of Pecans or Walnuts
METHOD:
Preheat oven to 350F (176C) degrees. Spray a 9” x 5 (23cm x 13cm) loaf pan with baking spray.
In a medium bowl mix dry ingredients and set aside. In a large bowl mix wet ingredients until combined.
Combine the dry into the wet, 1/3 at a time, being careful not to over mix! (Or you will have tough bread!) Fold in the chocolate chips and nuts.
Pour into a loaf pan. Bake for 55 mins or until a toothpick comes out clean.
If bread starts to brown too much on the top, cover with foil and continue to bake until cooked through. Slice into thick slices and serve

Hey guys welcome to my channel Sachin’s FoodTour. Due to lockdown, we were running short of videos related street food and travel vlogs so we have started home cooking food series. Aaj hum bana ne wale hain Mangalorean buns. Mangalore buns is a famous breakfast and tea time snacks in the coastal region of Karnataka. It belongs to coastal cuisine. These are made of flour and banana. The Buns are very soft, fluffy and mild sweet in taste. You can have this buns with chutney, sambhar or any spicy curries. Aaj iss video main humne banaya hain authentic Mangalore Buns with Spicy Green peas curry.
Mangalore Buns Recipe:
Ingredients:
1. Ripened Banana – 2
2. Besan (Gram Flour) – 2 tbsp
3. Half Cup Dahi (Curd)
4. Sugar – 1/4th Cup
5. Oil – 3 tbsp
6. Baking Soda – Half tsp
7. Salt
8. Maida – 2 ½ Cup Maida
Add 2 ripened banana in mixing bowl, add 1/4th cup sugar and mash smooth. Add half cup dahi, salt as per taste, besan (gram flour) 2 tbsp and half tsp baking soda and mix well. Add 2 ½ cup maida and prepare dough. Add 1 tbsp oil and mix well. Grease the dough with 2 tbsp oil. Cover and rest in warm place for 8 hours.
Next day, knead the dough well. Pinch a ball sized dough and roll it thick and then deep fry it in oil. Fry buns on medium flame on both sides till it turns golden brown.
Green Vatana Rassa Recipe:
Ingredients:
1. Tomato – 1
2. Crushed Ginger Garlic and Green Chillies – 2 tsp
3. Coriander leaves – 2 tbsp
4. Turmeric Powder (Haldi) – 1 tsp
5. Salt
6. Oil – 3 tbsp
7. Chili Powder – 2 tbsp
8. Besan (Gram Flour) – 2 tsp
9. Boiled Dried Green Peas – 1 bowl
10. Jeera (Cumin seeds) – 1 tsp
11. Onion – Half Cup
Add oil, Jeera and onion and stir well then add crushed Ginger Garlic and Green chillies. Add tomato, turmeric (haldi) powder, chili powder, salt, besan and stir well. Add boiled dry green peas and add water and close lid for 5 minutes. Add coriander leaves and close lid for 3 minutes.

BANANA COCONUT CUPCAKES WITH CREAM CHEESE FROSTING (TRADITIONAL VERSION)
Makes 12
INGREDIENTS:
2 ripe bananas
2 eggs
¾ cup (150 g) sugar
¾ cup (180 ml) Canola oil
½ cup (120 ml) water
1 tsp (5 ml) vanilla
1 ¼ cup (150 g) flour
1 tsp (5 ml) baking powder
½ tsp (2.5 ml) salt
FROSTING:
16 oz (460 g)cream cheese
½ cup (50 g) powdered sugar
1/3 cup (80 ml) milk
1 tsp (5 ml) vanilla extract
GARNISH:
½ cup (120 ml) Sweetened Coconut Flakes
METHOD:
Preheat oven to 400F/(200C)
In a large bowl mash two very rip bananas into a paste. Add eggs, sugar, oil, water, vanilla. Whisk until combined.
In a small bowl combine flour, baking powder, and salt. Whisk until combined.
Slowly add the dry ingredients to the wet ingredients until combined.
With an ice cream scoop, scoop 1 scoop of batter into each baking cup.
If using the Simply Baking Cups bake for 25-27 mins until golden brown and baked through. If baking in regular muffin papers bake for 20mins-22 mins until golden brown and baked through.
Allow to cool completely.
Combine the cream cheese, sugar and vanilla in the bowl of an electric mixer and beat until smooth. Add milk and beat until combined.
Transfer frosting to a pastry bag fitted with a star tip. (I really like the Wilton 2D tip for these)
Pipe a mound of frosting and dust with the coconut.

1 cup (120 g) all-purpose flour
¼ cup (30 g) almond meal
1 tsp (5 ml) baking powder
¼ tsp (1.25 ml) baking soda
½ tsp (2.5 ml) sea salt
1 cup (240 ml) soy milk
1 tbsp (15 ml) apple cider vinegar
¾ cup (150 g) organic sugar
1/3 cup (80 ml) coconut oil (melted)
1 tsp (5ml) vanilla
2 very ripe bananas, mashed
METHOD:
Pre-Heat oven to 350F (176C)
Combine apple cider vinegar and soy milk together and set aside for 10 minutes to curdle.
In another bowl combine flour, almond meal, baking powder, baking soda, and sea salt. Set aside
Whisk sugar, coconut oil, mashed bananas and vanilla extract into the curdled soy milk mixture.
Add wet ingredients to dry ingredients and mix until just combined (don't over mix).
Scoop cupcakes into liners or muffin tip and bake at 350F (176C) for 20 minutes.
Allow to cool and frost with Hot For Foods Buttercream Frosting.
