How To make Banana Almond Torte

Separated keep at room tempe 1 1/3 c Sugar
3 tb Lemon juice
1 tb Grated orange rind
4 Very ripe bananas,
Mashed (about 1 1/3 cups) 1 c Matzah cake meal
1 c Coarsely ground almonds
1 ts Salt
In a large bowl, with an electric mixer beat the yolks and they are thick and pale. Gradually add the sugar, beating until the mixture is very thick. Beat in the lemon juice and the rind, add the bananas, the matzah cake meal, the almonds and the salt and beat the mixture until it is combined well. In a clean dry bowl, with clean dry beater beat the whites until they just hold stiff peaks, stir 1 cup of them into the banana mixture and fold in the remaining whites gently but thoroughly, Pour the batter into an ungreased 9" tube pan (3 1/2" deep) with a removable bottom and bake the torte in the middle of a preheated 350 oven for 55-60 minutes, or until a tester comes out clean. Invert the pan over the neck of a bottle and let the torte cool upside down. Run a thin knife around the edge and tube of the pan and remove the side of the pan. Run the knife under the bottom of the torte to release it and transfer the torte carefully with 2 spatulas to a serving plate. I hope you enjoy this as much as I have. BANANA MUFFINS RECIPE
2 1/4 cup almond flour
1.5 teaspoons baking powder
1/2 teaspoon baking soda
3 ripe bananas (12-14 ounces)
3 tablespoons monk fruit (or maple syrup, honey or coconut sugar)
1 teaspoon vanilla extract
1/2 cup chocolate chips
2 eggs
INSTRUCTIONS
Preheat the oven to 350 (180 C) degrees. Line a 12-cup muffin pan with muffin liners or grease the pan.
In a large bowl, whisk together the almond flour, baking powder, baking soda, and salt.
Place the bananas in a medium bowl. Use a potato masher or fork to mash the bananas until they’re almost smooth.
Add the eggs, monk fruit (or maple syrup), and vanilla to the bananas and mix until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Add half of the chocolate chips and stir them in.
Divide the batter into all the muffin cups. Sprinkle the remaining chocolate chips evenly over the top of the batter.
Bake 20-22 minutes, until the muffins are puffed and golden brown. Cool 5 minutes, then transfer to a wire rack to cool completely.
NOTES
Muffins will keep 5-7 days when stored in the fridge or can be frozen for up to 3 months.

There are fewer cakes that tempt me as much as a #BananaAlmondCake! I've just realized myself, how easy it is to make this super delicious #cake at home. All you need is a handful of easily available #ingredients and you're set to go. Stuck at home? #Celebration coming up? or just feel like eating a cake? This is your go-to #recipe!
Here's how to make this super yummy treat at home:
Cooking time: 45 mins
****Ingredients:
2 medium to large ripe or overripe #bananas
1.5 cups whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
A pinch of salt
½ cup powder sugar
⅔ cup oil (you can even use butter)
1 teaspoon vanilla extract
10-12 halved almonds or chopped
****Method:
-Grease the pan with oil and keep it aside.
-Preheat your oven at 180°c. If using a regular oven, heat both the top and bottom elements. For a microwave convection oven, just preheat the oven.
-Peel and chop the bananas. Add them to a bowl and mash them with a fork. You can also use a blender to mash the bananas.
-Add sugar, oil, and vanilla extract.
-Stir very well so that the oil mixes with the banana purée and the sugar dissolves.
-Add sieved whole wheat flour, baking soda, baking powder, salt directly in the bowl.
-Fold the dry ingredients into the wet ingredients very well by using cut & fold method, this will break the big bubbles into small bubbles and will make your cake rise well.
-Refrain mixing the cake too much, since we would require some bubbles to be there in the batter, as that would make the cake soft & tender
-Pour the batter in a greased loaf pan or round cake pan.
-Gently tap & shake the pan to let it settle well.
-Garnish the chopped almonds over the top.
-Place the pan in the Oven.
-Bake in the preheated oven at 180°c for 30 to 40 mins or till the toothpick inserted in the cake comes out clean.
-If the top of the cake starts browning then cover the top with an aluminum foil or butter paper.
-When warm or cooled, slice and serve banana almond cake plain with tea or coffee.
