How To make Baked Tilapia with Whole Spices

-4-inch sticks 4 Green onions, cut into
-3-inch sections 8 Quarter-size slices ginger
-(no need to peel) 1 ts Whole allspice
3 Star anise pods, broken up
1/2 ts Whole peppercorns
2 sm Dried chiles, any loose
-seeds removed 2 Tilapia, cleaned and scaled
-(2 1/2 to 3 pounds in all) Salt 3 tb White wine
1/2 c Fish or poultry stock
1 tb Butter (optional)
This will work with other whole lean fish, including small rockfish or farmed striped bass, and cuts or 'roasts' of halibut or pink salmon. Adjust the cooking time according to the thickness and density of the fish. Preheat oven to 400 degrees F. Rub a baking dish well with the oil, add the vegetables and whole spices, and toss to coat them lightly with oil. Arrange in an even layer. Rinse the fish well inside and out, pat dry, season lightly with salt, and place on top of the vegetables. Add the wine and 3 tablespoons of the stock. Make a loose tent of foil over the tail of the fish and place in the oven. Bake, rotating the pan once halfway through the cooking time, until a skewer easily enters the thickest part of the fish, 25 to 30 minutes. If you have an instant-reading thermometer, it should read 145 degrees F.to 150 degrees F.in the center near the bone. Transfer the fish to a warm serving platter. Strain the contents of the baking dish into a small saucepan; discard the spices and vegetables. Add the remaining stock, bring to a boil and reduce by a third. Taste for seasoning and adjust if necessary. Swirl in the butter if desired and pour over and around the fish on the platter. PER SERVING: 220 calories, 40 g protein, 2 g carbohydrate, 5 g fat (0 g saturated), 98 mg cholesterol, 8 mg sodium, 0 g fiber. Jay Harlow writing in the San Francisco Chronicle, 12/16/92.

Today I’m sharing my easy pan seared tilapia recipe! This recipe will give you fish that is crispy on the outside and perfectly flaky and delicious on the inside! Cook my tilapia recipe on a weeknight for a quick, delicious and easy dinner!

INGREDIENTS:
2 large tilapia fillets
1 tbsp olive oil
2 tbsp butter
2 garlic cloves
1/4 lemon
Parsley for garnish
Dry Batter:
2 tbsp all purpose flour
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp red chilli flakes
1/2 tsp dried oregano
1/4 tsp dried thyme
METHOD:
1. Clean and pat dry 2 large tilapia fillets. Sprinkle with a pinch of salt and set aside for 5 mins
2. In a plate, mix all the ingredients mentioned under dry batter. Coat the fish on both sides with the dry batter and gently shake off excess
3. On low flame, heat 1 tbsp olive oil in a skillet/wide pan and infuse it with 2 crushed garlic cloves. Once the garlic starts to brown, remove it from the pan. This way we get a subtle garlic flavor in the dish
4. Next melt 2 tbsp butter in the oil. If using salted, don't add salt to the dry batter or it might end up too salty
5. Set flame to medium and gently place the fish. Fry for 3-4 mins per side. Be careful while flipping as it can break easily
6. Once the fish is done, squeeze the juice of 1/4 lemon all over and garnish with fresh parsley
7. Serve these delicious pan fried Tilapia fillets with sautéed veggies or a salad

SUBSTITUTES:
• What other fish can be used?
Bass, cod, snapper, halibut
• Can prawns be used?
Yes
• No parsley?
Coriander/cilantro can also be used
• No dried oregano/thyme?
Use 1 tsp mixed herbs/Italian seasoning
• No red chilli flakes
Use red chilli powder

TIPS:
• Be careful while flipping the fish as it can break
• Adding lemon juice at the end helps cut the richness of the butter
• Store leftover dry batter in an airtight container in the freezer and use it the next time you make this recipe

To Marinade the Fish
- 3 medium tilapia fish
- 2 tablespoons green pepper sauce (or any pepper sauce of choice)
- 2 tablespoons ketchup
- 1 onion bulb (finely minced)
- 1 teaspoon minced garlic
- 1/2 tablespoon paprika powder
- 1/2 teaspoon curry powder
- 1/4 teaspoon thyme
- 3 seasoning cubes
- Salt to taste
- Juice of 1/2 a lemon
- 1 cooking spoon oil
For the Sauce
- 6-7 fresh tomatoes
- 3 chilli red bell pepper (tatashe)
- 1 large onion bulb
- 1/2 teaspoon minced garlic
- 1/2 teaspoon minced fresh pepper
- 1 red bell pepper (cut in strips)
- 1 green bell pepper (cut in strips)
- 1 yellow bell pepper (cut in strips)
- 2 cooking spoon vegetable oil
- 1/2 teaspoon curry powder

EASIEST BAKED WHOLE FISH RECIPE EVER! EUROPEAN SEA BASS — BRANZINO
European Sea Bass also known as “Branzino” is by far my favourite fish to bake or grill in the summer. It is so incredibly easy and you never have to be intimidated ever again with this easy method. You can absolutely do this with any whole fish you love. Please ask your grocery store or fish monger for European Sea Bass and they will direct you. Truth is, just like any cut of meat all the flavour is ALWAYS in the bones. When you cook a whole fish you have so much more flavour and it’s so incredibly easy to make too. This type of fish reminds me of growing up on the Black Sea and the Mediterranean too. My dad and I would order a grilled fish which they just caught fresh in the sea and nothing felt more nostalgic than this. Picking out the bones was my favourite part because it made you work for your delicious meal and made it that much more worth it. You will need:

1 whole Branzino also known as European Sea Bass — mine was 0.406kg for reference
salt and pepper to taste
drizzle of olive oil
3 thinly sliced lemon slices
fresh lemon thyme or parsley
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Please note : Please be careful when eating this fish as it does have some bones. It will not taste fishy at all and you can add any herb in the crevice that you wish. You can use any white fish you like for this recipe. Make sure the eyes are clear and the fish is fresh — if it’s fresh it won’t have a strong smell.

Pre-heat oven to 400F or you can make it on the BBQ as well. Season with salt, pepper and olive oil on each side of the fish and add a sprinkle of salt and pepper in the crevice as well. I added lemon thyme from the garden and lemons to the crevice ( parsley works too ). Bake on a baking sheet lined with parchment paper for 25-30 minutes. Mine took 30 min and I let it rest for 5. Remove the lemons and herbs from the crevice and gently open up your fish. Discard the fish bone and any additional bones. Garnish with parsley, lemons, and drizzle of olive oil. Enjoy and follow for more.
