How To make Baked Noodles Mlinci
INGREDIENTS 1/2 c Water, lukewarm
1/4 Cake yeast, (or 1/4 tsp. dry
-pkg yeast) 1 Egg, beaten
1 tb Salad oil
1 ts Salt
2 1/2 c Flour
Source:Treasured Slovenian & International Recipes DIRECTIONS Crumble yeast into lukewarm water and add beaten egg, salt, salad oil and flour. Knead well to make a medium dough. Roll out into rounds as for noodles, only not quite so thin. Pierce each round with a fork and bake in oven at 325 F until a delicate brown on both sides. "Mlinci" are baked on the lowest rack in the oven and must be turned. When baked, cool and break the "mlinci" into a large bowl. Pour over enough salted boiling water to cover and let stand for two minutes. Pour off water into another bowl and drain "mlinci" dry. Once again pour on same water and allow to absorb about one hour. Pour hot melted butter over "mlinci" and serve. You may substitute poultry or pork roast drippings for butter.

Mlinci - between flat bread and pasta - gluten free version - Croatian Recipe
Hi all,
I was making some Mlinci to go with out roasted chicken and opted to shoot the video.
Mlinci are a traditional side dish that is served during winter in continental Croatia, Slovenia and Vojvodina. We serve it with roasted meat. They go extremely well with poultry, be it a goose, chicken or turkey. You can also serve them with pork. or in case of Vegan or vegeterian mushrooms - Portobello or Porcini are perfect with them.
The usual Christmas dinner in Croatia would include roasted turkey or goose served with mlinci and podvarak (sautéed sour cabbage).
This is my family recipe for mlinci, and we use one egg in it. You can omit the egg and make them vegan. I use all purpose gluten free flour, but the procedure is completely the same whether you make gluten free mlinci or normal ones. Just don't use self risng flour. Mlinci should not rise.
There is a bit of procedure in making them. They need to be baked and dried out first. Then you cook them and coat them with fat and pan drippings. But you can store them for a long time. Usually grandma would make this in autumn, on the wood stove, and we would eat them during the winter.
If you will store them in the pantry then make sure they are bone dry before you put them in a zip lock bag or a container, and store them somewhere dry.
