Baked cod with Panko crumbs are made by seasoning the cod fillets first, then topping them with a crust made of Panko breadcrumbs seasoned with herbs and spices. A binding agent is used to get the crust to stick to the fillets. The crumb-topped fish fillets are then baked, which results in flavorful, moist fish with a crunchy panko-herb crust.
If you’ve not heard of Panko crumbs, they are flaky Japanese breadcrumbs made from bread without crusts. They are lighter, absorb less oil and stay crispy for longer than regular breadcrumbs. These are my favorite type of breadcrumbs and I use them for making appetizers like crispy prawns fry and Italian cheese potato croquettes.

Super Easy Oven Baked Fish Fillet in 5 Minutes

1 Cod Fillet/Basa Fillet
1 tsp Garlic Powder
1 tsp Dry Parsley
2 tsp Chilli Flakes
1 tsp Italian Seasoning
2 tsp Fish Seasoning or your Favorite Seasoning
1 tsp Smoked Paprika
1 Seasoned Salt and Blackpepper to Taste

Italian Roasted Cod in a Veggie Broth
Served with a light and fragrant broth, this tasty dish is super simple to create.
Serves 2
Ingredients:
2 x cod steaks
1 x jar of Napolina red pesto
Salt and pepper
Napolina Olive Oil
150ml of vegetable stock
1 x clove of garlic finely chopped
A handful of fresh thyme finely chopped
100g of multi coloured cherry tomatoes halved
1 x yellow and red pepper sliced
1 x yellow and green courgette sliced
1 x 400g can of Napolina Butterbeans
Fresh parsley to serve
Method:
Heat the oven to 180c
For the broth, in a saucepan drizzle Napolina olive oil and warm slightly, then add in the garlic, fresh thyme, pepper and the courgettes, sauté until they just start to colour. Now add the cherry tomatoes and the stock and start to simmer.
Add Napolina Butterbeans and warm through, the stock should have reduced a little and the Napolina Butterbeans will be making the whole sauce creamier. Season to taste and stir in the fresh parsley.
Lay the cod steaks on a slightly greased baking tray, spoon a teaspoon of Napolina red pesto on each cod steak and using your fingers rub in the pesto so they are well coated, drizzle over the Napolina olive oil and sprinkle with salt and pepper.
Pop these into the hot oven and bake for 15 minutes, these cook perfectly at the same time as your broth finishes off.
The cod should feel firm to touch and just want to flake away from the steak, you then know you have a perfectly cooked piece of fish.
Ladle the broth into some shallow bowls and place the cod on top, sprinkle with some fresh parsley and enjoy some warm crusty bread.

What You Need for this Baked Cod Recipe
2 COD FILLETS (about 8oz each)
½ ONION (sliced)
½ cup PANKO BREADCRUMBS
1 Tbsp melted BUTTER
½ tsp PAPRIKA (optional)
SALT and PEPPER to taste
chopped fresh DILL
spray cooking OIL for pan and onions
sauce:
½ cup MAYONNAISE
some chopped fresh DILL
1-2 Tbsp chopped PICKLES or PICKLE RELISH
spoonful or two of the pickling solution or
1 Tbsp fresh LEMON JUICE (add zest for extra lemony-ness)
(also...add a sqeeze of dijon mustard if desired)
How to Make a Baked Cod Recipe
Pat the cod fillets dry and lightly season with salt and pepper
Heat a skillet on the stovetop and melt butter.
Turn burner off, add breadcrumbs to the skillet and stir until butter is absorbed.
Add salt, pepper, any other spices desired, ½ of the chopped dill, and mix well.
To make the sauce, combine the remaining dill, mayonnaise, chopped pickles, and pickling solution or lemon juice, in a bowl, and stir until smooth.
Spray a baking pan or aluminium foil with cooking spray.
Lay onion slices in pan and place fillets over top the onions.
Evenly coat the tops of the fish with the tartar sauce mixture.
Sprinkle and press the seasoned panko crumbs into the sauce.
Place pan in oven and bake at 400 degrees F for 20-25 minutes until the crumb topping has turned a nice, golden brown.
Serve with rice and veggies.
