My meal prep lemon orzo bake is a game changer for healthy weekday eating. This is the ultimate one-pan, “set it and forget it” meal. It takes a few minutes to prep, 40 minutes to bake, and lasts in the fridge for up to 3 days. It’s endlessly customizable, from the seasonings and veggies used, to the quantity of chicken, which can be increased to meet specific protein goals. There is nothing better than coming home from an exhausting day of work or a tiring workout and finding this meal ready to be reheated and enjoyed.
This is a complete meal, with lean protein from boneless skinless chicken thighs, carbs from orzo (orzo is a glutenous pasta shape like rice), and fiber and nutrients from zucchini. You can use chicken breast instead, but I prefer thighs for their superior flavor and juiciness.
Because this dish brings so much ease and simplicity to my weekday menu planning, I often bake multiple servings at a time in individual serving-size dishes. This recipe can be prepped and baked directly in an oven-safe dish; I cooked in oven-safe glassware which I could easily pop a lid on and store in the fridge.

INGREDIENTS
The Chicken:
5 ounces cubed boneless skinless chicken thighs (1/2 cup)
1 ½ tablespoons plain yogurt
½ tablespoon lemon zest
juice of 1/4 lemon
½ teaspoon dry oregano
salt, to taste
The Orzo:
3 tablespoons orzo
pinch of salt
squeeze of lemon juice
6 tablespoons unsalted broth (vegetable, chicken, beef, or whatever your preference)
⅓ cup finely chopped zucchini

INGREDIENTS:
For Lemon Feta Chicken
- 4 Large Boneless Skinless Chicken Breasts each about ½lbs
- 1 Tablespoon Olive Oil
- Salt and Pepper (as per taste)
- 1½ Teaspoon Dried Oregano
- ¼ Cup Lemon Juice 2 Medium Lemons
- ¼ Cup Crumbled Feta Cheese
For Orzo
- ½ Stick Butter
- ½ Tablespoon Olive Oil
- 1¼ Cup Dried Orzo 8 ounces
- ¼ Cup Crumbled Feta Cheese
- ½ Cup Heavy Cream
For Serving (optional)
- Freshly Chopped Cilantro
- Lemon Zest
- Lemon Rind
METHOD:
1) Preheat Oven to 450 degrees F
2) Coat chicken with Olive Oil, Salt, Pepper, Dried Oregano, Lemon Juice, and Crumbled Feta Cheese. Coat both sides of the chicken evenly.
3) In a skillet add some butter and olive oil. As the butter begins to melt add orzo.
4) Cook Orzo for 30-seconds. Into this add Crumbled Feta Cheese, Heavy Cream, and Water. Use a wooden spatula or a silicone spatula to mix well. Cook on low heat for 1-2 minutes stirring often.
5) Pour cooked orzo into a baking dish. Place Chicken Breast on the orzo. Bake in a preheated oven at 450 degrees F for 15-18 minutes or until it reads an internal temperature of 165 degrees F when measured with an Instant read thermometer.
6) Garnish with Lemon zest and lemon rind. Serve with freshly chopped cilantro on top.

Ingredients
Chicken Meatballs
▢1 pound ground chicken (454 grams)
▢½ cup dry breadcrumbs (55 grams)
▢½ cup Parmesan cheese (35 grams)
▢¼ cup milk
▢1 egg
▢¼ cup fresh parsley (finely chopped) optional
▢1 teaspoon Italian seasoning
▢1 teaspoon salt
▢1 teaspoon minced garlic
▢½ teaspoon onion powder
▢¼ teaspoon black pepper
Garlic Parmesan Orzo
▢2 cloves garlic (finely minced)
▢2½ cups low sodium chicken broth
▢1½ cups dry orzo pasta (about 278 grams)
▢⅔ cup cream (any kind - heavy cream will give a richer flavor, light cream will be a bit thinner)
▢¼ cup shredded Parmesan cheese
▢½ teaspoon salt
▢¼ teaspoon black pepper
Instructions
Chicken Meatballs
In a large mixing bowl, combine chicken, bread crumbs, cheese, milk, egg, parsley, Italian seasoning, salt, garlic, onion powder, and pepper. Mix well but don't overmix; make sure there are no clumps of bread crumbs in the mixture. Let sit for 10-20 minutes for the bread crumbs to absorb excess moisture.
Roll into 1-1¼ balls.
Heat a large skillet over medium-high heat. Add 2 tablespoons of oil and sear the meatballs on all sides until golden brown.
Remove to a plate and cover with foil to keep warm.
Garlic Parmesan Orzo
Add the garlic to the skillet and cook for 1 minute.
Add the broth and scrape the bottom of the pan with a wooden spoon to deglaze. Bring it to a low boil.
Add the orzo, cream, parmesan, salt, and pepper, and stir. Place the meatballs on top, cover, and simmer over medium-low heat for 10 minutes until the orzo is al dente. It might look liquidy at first, but it will thicken quickly!
Taste and serve.
