Step 1: Make Doritos Pizza Dough
Ingredients
* 1 tsp sugar
* 1 ½ teaspoon active dry yeast
* 1 tbsp olive oil
* 1 cup warm water
* 2 1/3 cups AP flour
* 2 Tbsp cheddar powder
* 1 tsp chili powder
* 1 tsp paprika
* ½ tsp onion powder
* ½ tsp garlic powder
* 2 tablespoons warm water
1) Add sugar, yeast, olive oil, and warm water to a bowl and whisk together. Allow to sit for 5 minutes.
2) While the yeast is blooming, add flour to a stand mixer bowl with cheddar powder, chili powder, paprika, onion powder, and garlic powder and mix until combined.
3) Add the yeasty water to the dough and turn the stand mixer with a dough hook attachment on medium speed and knead for 6 minutes.
4) Remove the dough from the stand mixer and add to a large bowl greased with olive oil. Cover with a wet towel and let rise for 4 hours.

Step 2: Make Fire Sauce Alfredo + Chicken
Ingredients
* 1 stick unsalted butter
* 4 cloves garlic
* 1 ½ cups heavy cream
* ⅓ cup parmesan
* ½ tsp black pepper
* 2 Tbsp Taco Bell fire sauce
* 8 ounces chicken breast, cut into cubes
* 3 slices bacon diced
* 5 button mushrooms cut into slices
* ¼ onion, roughly diced

* Neutral oil
1) Add butter to a sautee pan on medium heat and add minced garlic. Let sautee for 3 minutes, until hella fragrant, then add your heavy cream. Use a silicone spatula or whisk to mix together. Let simmer for two minutes, then add fire sauce, black pepper, and parmesan, turn off the heat, and mix.
2) Season chicken breast chunks with Tony Chachere’s (or anything!). Add 2 Tbsp vegetable oil to a cast iron pan and heat on high. Add chicken, bacon, onion, and mushroom to the pan and sautee for about 6 minutes, until chicken is browned and veggies have softened.
3) Drain any liquid out of the chicken pan, then add alfredo sauce and toss.

Step 3: Fill and Bake
Ingredients
* 1 bag Nacho Cheese Doritos
* 1 bowl whisked eggs
* 1 bowl chicken alfredo mixture
* 2 cups shredded (from block) mozzarella
* 1 small bowl ranch
* 1 small bowl marinara sauce
1) Preheat the oven to 400 degrees. Add Doritos to a food processor and pulverize until they form a fine dust.
2) Punch down dough and roll it out. Add a hefty layer of mozzarella cheese on bottom. Add chicken alfredo mixture to the top of that. Add more cheese on top of that. Fold the dough over the filling and then braid the ends of the calzone.
3) Pour Doritos out directly on a clean countertop. Flip the calzone, and brush the bottom with egg wash, then flip it on top of the Doritos. Brush the top of the calzone with egg wash then dust with doritos.
4) Add to a nonstick baking sheet and bake for 20 minutes.

Not : use low to medium flame only
If the dough is to be aged for long time, keep it in the refrigerator .

Wondering how to make your own calzone pizza? In this video from Food Talks, you will learn how to make perfect calzone in your Roccbox pizza oven, or any other pizza oven. This recipe can also be adapted for the regular home oven.
Instructions for conventional oven:
Preheat a pizza stone/steel for 30-40 minutes at the max temperature your oven can reach. Prepare the calzone but don't top it just yet with the tomato sauce and cheese. Then cook the pizza calzone on the pizza stone for about 5 minutes, or until the dough is cooked and has a nice brown color, and the cheese is melted. After the dough is cooked, take the calzone out of the oven, add tomato sauce and mozzarella cheese on top, and return to the oven only 1-2 minutes to let the cheese melt.
Calzone ingredients:
210g pizza dough (How To Make Calzone Pizza Dough➡️
Ricotta cheese
Salami cut into small pieces
Mozzarella cheese for pizza
Tomato sauce (How To Make Perfect Pizza Sauce In 5 Minutes➡️
Fresh basil leaves
Olive oil
Spicy oil (optional)
Salt & pepper
Instructions:
1. Preheat the pizza oven at 400C then lower flame to medium.
2. Cover pizza dough with semolina. Spread the dough starting from the outer edges then to the center.
3. Use gravity and lift the dough for the final stretch, making sure the edges are flat.
4. Spread 2-3 tbs of ricotta cheese on one side of the pizza base, but stay away from the edges. Add small pieces of salami and mozzarella cheese. Drizzle with olive oil, add salt & pepper.
5. Fold the pizza dough in half, making sure to seal the edge firmly.
6. Top the calzone as if you were making a pizza, adding tomato sauce, fresh basil leaves, and more mozzarella cheese.
7. Slide the calzone on the Gozney pizza peel and launch into your pizza oven.
8. Cook in the front part of the oven for 3-4 minutes, making sure to rotate throughout the cooking time.
