In today's video, we show you how to make Baba Ghanoush. Baba Ganoush is a smokey and creamy eggplant dip that is very popular in the Middle East, including Lebanon, Egypt, Jordan and Turkey. Baba ghanouj is made using roasted eggplants (also known as aubergine) and is perfect with hot toasted pita bread.
How to make Baba Ghanoush:
2 x medium eggplants
extra virgin olive oil
2 garlic cloves (either fresh or roasted - both work well)
1/4 cup Tahini (sesame seed paste)
salt to taste
juice of half a lemon
1 tbs olive oil
garnish with: parsley, finely chopped, red chili and olive oil

Baba Ghanoush
Recipe in English:
Ingredients:
-Baigan (Eggplant) round 3
-Lehsan (Garlic) cloves 10-12
-Tahini paste 8 tbs
-Lemon juice 3-4 tbs
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Olive oil 4 tbs
With Tomato & Capsicum:
-Tamatar (Tomato) deseeded & finely chopped 1 tbs
-Shimla mirch (Capsicum) finely chopped 1 tbs
With Coriander & Garlic:
-Hara dhania (Fresh coriander) finely chopped 1-2 tbs
-Lehsan (Garlic) finely chopped 1 tsp
With Garlic:
-Lehsan (Garlic) finely chopped 1 tsp
Directions:
-Add cuts on eggplants and stuffed with whole garlics.
-Heat griddle,place stuffed eggplants,cover and roast for 15 minutes (each side) then turn and roast until soft and skin is burnt (approx.30-40 minutes).
-Let the eggplants cool and cut into two halves.
-With the help of the spoon,scoop out the flesh and discard skin,excess seeds and drain or remove excess liquid.
-Now chop well the eggplant.
-In bowl,add chopped eggplant,tahini paste,lemon juice,salt,red chili powder and mix well.
-Add olive oil and mix well.
-Divide prepared eggplant paste into three portions.
With Tomato & Capsicum:
-In prepared eggplant paste,add tomato,capsicum and mix well.
With Coriander & Garlic:
-In prepared eggplant paste,add fresh coriander,garlic and mix well.
With Garlic:
-In prepared eggplant paste,add garlic and mix well.
-Sprinkle paprika powder,drizzle olive oil & serve with pita bread.

Ajza:
-Baigan (Eggplant) round 3

Directions:
-Baigan mein cuts laga lein aur sabut lehsan ko cuts ka ander dal dein.
-Tawa ko garam karein aur stuffed baigan rakh dein,dhak ker 15 minutes kliya roast karein (each side) phir turn ker lein aur naram hunay & jal janay tak tak roast ker lein (approx.30- 40 minutes).
-Baigan ko thanda ker lein aur do hisson mein cut ker lein.
-Spoon ki madad sa baigan ka ander ka gooda nikla lein,skin ko pheek dein aur excess nikal lein aur excess liquid ko remove ker lein.
-Ab baigan ka gooda ko ache tarhan chop ker lein.
-Bowl mein chopped baigan,tahini paste,lemon juice,namak aur lal mirch powder dal ker ache tarhan mxi ker lein.
-Olive oil shamil karein aur ache tarhan mix ker lein.
-Baigan ka paste ko teen portions mein divide ker lein.
With Tomato & Capsicum:
-Tayyar baigan ka paste mein tamatar aur shimla mirch dal ker ache tarhan mix ker lein.
With Coriander & Garlic:
-Tayyar baigan ka paste mein hara dhania aur lehsan dal ker ache tarhan mix ker lein.
With Garlic:
-Tayyar baigan ka paste mein lehsan dal ker ache tarhan mix ker lein.
-Paprika powder aur olive oil dal dein & pita bread ka saath serve karein.

About Baba Ganoush
Baba ghanoush (Arabic: بابا غنوج, romanized: bābā ġannūj), also spelled baba ganoush or baba ghanouj is a Levantine appetizer consisting of finely chopped roasted eggplant, olive oil, lemon juice, various seasonings, and tahini. The Middle Eastern version consists of onions, tomatoes, or other vegetables. The eggplant is traditionally baked or broiled over an open flame before peeling so that the pulp is soft and has a smoky taste. It is a typical meze ('starter') of the regional cuisine, often served as a side to the main meal and as a dip for pita bread. Eastern Arabian cuisine versions of the dish vary slightly from those of the Levant by spicing it with coriander and cumin; those versions might be minimally spiced and topped with thinly chopped parsley or coriander leaves. |

Egyptian Baba ghanoush / Moutabel:
800g Aubergines ~ 250g roasted aubergine flesh drained
15-25g parsley
2 Garlic Cloves
2 Tbsp tahini
2-4 Tbsp yoghurt depending upon how thin you want it
2 Tbsp freshly squeezed lemon juice
2 Tsp Vinegar
3/4 Tsp Salt
1/4 Tsp Ground Cumin
1/4 Tsp Ground Coriander
1/8 Tsp Cayenne Pepper
Olive oil for topping
Syrian / Lebanese Baba ghanoush:
800g Aubergines ~ 250g roasted aubergine flesh drained
1/2 Small onion
1 Small Tomato
1 Sweet Red pepper
1 Green Chili
1 clove garlic
10g Parsley
5g Mint
10g Pomegranate Molasses
1/4 Cup Lemon Juice
25g Olive oil
3/4 Tsp Salt
1/8 Tsp Cumin

A popular middle eastern dip made using roasted brinjals. Goes perfect with lavash sticks.
BABA GANOUSH
Ingredients
1 large eggplant
2 tablespoons olive oil + for basting and drizzling
½ cup chopped fresh parsley + sprigs for garnishing
4 garlic cloves, crushed
¼ teaspoon lemon juice
Salt to taste
3 tablespoons tahini
Lavash for serving
Method
1. Preheat the oven to 180˚C.
2. Place eggplant in a baking tray. Baste with some oil. Put the tray in the baking oven and bake for 10 minutes.
3. Remove the tray from the oven. Moisten your fingers with water and peel off the outermost skin of the eggplant.
4. Transfer to a serving plate and cut into squares.
5. Combine eggplant with parsley, garlic cloves, 2 tablespoons oil, lemon juice, salt and tahini in a food processor. Mix well into a smooth paste.
6. Transfer to a serving bowl. Drizzle olive oil and garnish with parsley sprigs.
7. Serve hot with lavash.
