How To make Avocado Muffins
1/4 c Butter Or Margarine
1/4 c Sugar
1 Egg
1 Pureed Avocado
1 c Toasted Slivered Almonds
1 c Milk
2 c Self-Rising Flour
Preheat oven to 400?F and prepare muffin pans. Cream butter and sugar. Beat in the egg. Blend in the avocado, milk and nuts. Lastly add the flour and mix gently but thoroughly until the ingredients are moistened and combined. Place in pans and sprinkle each with topping. Bake for 20 to 25 minutes. Note: Add a dash of grated lemon rind. Almonds may be toasted quickly in the microwave or in a dry frying pan, stirring constantly to stop burning.

1 cup Quinoa flour (150g) OR any gluten free flour
3 tbsp Ground Almond powder OR Almond flour
1 tsp Baking powder

1/4 cup Quinoa flour
1/3 cup Brown Sugar
3 tbsp Butter, softened

Easy Avocado Muffins Recipe | So Delicious and Quick!
???? Ingredients for 14 Muffins:
300 g avocado, (around 3 small avocados weighed after removing the skin and seed)
1 cup (200g) granulated sugar
½ cup (125g) neutral flavored oil
1 cup (240g) milk
½ cup (15g) baby spinach, or green food coloring (optional)
1 tablespoon lemon juice
1 tablespoon lemon juice
3 cups (375g) flour
3 teaspoons baking powder
¼ teaspoon baking soda
Pinch of salt
1 cup (190g) mini chocolate chips, or chocolate chunks
For decorate:
¼ cup (50g) mini chocolate chips
2 tablespoons pistachios, chopped
Bake the muffins at 180°C (350°F) for 20-25 minutes in the preheated oven.
