This appetizer is inspired by one of the most popular items on The Cheesecake Factory's menu. They're easy to recreate at home despite the large amount of ingredients in the recipe. The avocado filling is very reminiscent of guacamole. The original Cheesecake Factory recipe uses tamarind, but because it may be hard to find, it is optional. Avocado Egg Rolls & Cilantro-Cashew Dipping Sauce
Makes 15 egg rolls
Ingredients
Egg Rolls
• 5 large avocados, peeled and diced (750 g)
• ⅓ cup sun-dried tomatoes, minced (80 g)
• ½ cup red onion, finely chopped (75 g)
• 6 sprigs cilantro, finely chopped (7 g)
• ¼ tsp salt
• 15 egg roll wrappers
• 1 tbsp flour and 1 tbsp water for sealing
Sauce
• 4 tsp white vinegar
• 1 tsp balsamic vinegar
• ½ tsp Worcestershire sauce
• ⅓ cup honey
• ½ cup chopped cashews
• 1 cup fresh cilantro, chopped
• 1 tbsp granulated white sugar
• 1 tsp ground black pepper
• 3 tbsp extra virgin olive oil
• ½ tsp tamarind pulp (optional)
Procedure
Egg Rolls
1. Stir together avocado, sun-dried tomatoes, red onion, cilantro, and salt, being careful to not soften the avocados too much.
2. Put about 2 spoonfuls of the mixture onto an egg roll wrapper in a line. Find the bottom corner up over the filling and compact the mixture. Fold one side corner in, and roll until a third of the wrapper is left. Fold the other side corner in, and roll towards the top corner. Seal the edge with a 1:1 ratio of flour and water mixture.
3. Fry egg rolls for about 5 minutes in 2 inches of oil at 400°F (204°C) or until golden brown. Blot excess oil on paper towels.
Sauce
1. Blend all ingredients except olive oil together with a food processor or blender. When thoroughly combined, stream in the olive oil while blending. Refrigerate until before serving.
