1/4 c Finely chopped almonds 1/2 c Butter 1 t Tarragon vinegar 20 oz Frozen asparagus spears, -cooked and drained 1. In a small, heat-resistant, non-metallic bowl, place almonds and butter. 2. Heat, uncovered, in Microwave Oven 1 1/2 minutes or until nuts are lightly browned. 3. Stir in vinegar. 4. Pour sauce over hot or cooled asparagus.

Quinoa Salad With Asparagus
Recipe: ½ cup quinoa (uncooked) ½ lbs asparagus cut into 1 ½ inch pieces and steamed ½ red onion diced small 1 lemon juiced 2 tbls parsley chopped fine 1 tsp garlic chopped fine 1 pint cherry tomatoes Salt to taste Pepper to taste
Combine cooked quinoa and remaining ingredients in a bowl. Mix to combine. Enjoy!

This is an easy way to use the small green asparagus we get in the spring. It’s also a great dish to make if you’re feeling tired. You can literally pull it together in the time it takes to boil the pasta!
It’s basically an asparagussied up version of an olio aglio or pepperoncino pasta. For more protein, we’ve added ½ cup of frozen lima beans. We have also reserved some pasta water to moisten the sauce instead of adding in more oil. Serve it with a chunk of Parmigiano on the table ready to be grated over the pasta.
