Chicken Rice Mix
1 pk : Rice Pilaf Mix
2 : Jars (6 oz) Marinated
Artichoke Bottoms
5 : Green Onions
1/2 ts : Curry Powder
2 : Jars Marinade From
1/2 : Green Pepper, Sliced
Green Olives
1/3 c : Mayonnaise

This flavorful Brown Rice Salad with Capers, Artichoke Hearts & Greek Feta Vinaigrette is perfect for your summer cookout! With light and bright flavors and colors, this tasty dish will be a hit all summer long!
INGREDIENTS
2 cups Signature SELECT™ long grain brown rice, cooked and cooled
1 cup Signature SELECT™ marinated artichoke hearts
1 cup baby spinach
3 Tbs minced parsley
1/4 cup thinly-sliced green onion
1/4 cup minced red pepper
1/4 cup minced yellow pepper
2 pinches seasoning
1/2 cup Signature SELECT™ Greek Feta vinaigrette
DIRECTIONS
1. In mixing bowl, combine cooked/ cooled rice, artichoke hearts spinach, parsley, green onions and peppers.
2. Season with salt and pepper, dress with Greek feta vinaigrette, then mix to distribute dressing and coat all ingredients evenly. Transfer to serving bowl and enjoy

1/4 c : Parsley; Chopped
3 tb : Scallions; Minced
1/2 ts : Sugar
1 c : Peas; Cooked
1 : Clove Garlic; Peeled and Cut
8 : Cherry Tomatoes; Halved

Easy Tomato Marinated Artichoke Olives Rice Salad Recipe
Ingredients:
1 (6 ounce) jar marinated artichoke hearts, liquid reserved
2 tablespoons lemon juice
1 teaspoon finely chopped garlic
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 cups chilled cooked long-grain white rice
3 large tomatoes, seeded and diced
1 cup finely chopped red onion
1 (6 ounce) can pitted whole black olives, drained
Directions:
In a large bowl, mix the reserved artichoke marinade, lemon juice, garlic, salt, and pepper. Gently mix the artichoke hearts, rice, tomatoes, onion, and olives into the bowl. Cover, and refrigerate until serving.
