Arroz con pollo a la chorrera Estilo cubano
Ingredientes
1 pollo entero ( 4-5 lbs )
1 libra de arroz Valencia (bolito )
1/2 Ají verde
1/2 Ají maduro
1 cebolla mediana entera
3 dientes de Ajo grande
2/3 tazas de aceite de Oliva extra virgen
1 taza de vino seco blanco
6 onzas de salsa de tomate
4 tazas de caldo de pollo
1 cucharada de perejil picado
1/8 cucharadita de pimienta negra molida
1/4 cucharadita de comino
2 cucharadas de sal ( al gusto )
1 paquetito de sasonador de paella con azafrán
1/4 cucharadita de Bijol
1 latíca a de petit pois (sweet peas )
1 latica de Pimientos Morrones
1 cerveza
Ingredients:
1 whole chicken (4-5 lbs)
1lbs of Valencia rice
1/2 red bell pepper
1/2 green bell pepper
1 medium onion
3 pieces of garlic
2/3 cup of extra virgin olive oil
1 cup of dry wine
6 ounces of tomato sauce
4 cups of chicken broth
1 cup of parsley
1/2 teaspoon of black pepper
1/4 teaspoon of comino
2 tablespoons of salt (to taste)
1 package of paella with saffron seasoning
1/4 teaspoon of bijol
1 little can of sweet peas
1 beer
1 little jar of sweet peppers

Dad's Arroz con Pollo
2 tablespoon (30 mL) olive oil
4 chicken thighs (skin on)
2 drumsticks (skin on)
1 yellow onion, diced
3 garlic cloves, minced
3 Roma tomatoes, peeled and minced
½ red bell pepper, chopped
1 teaspoon (5 mL) cumin powder
½ teaspoon (2.5 mL) tumeric powder
¼ teaspoon (1.25 mL) paprika
1 teaspoon (5 mL) saffron
Pinch of red pepper flakes
Salt
1¾ cup (14-ounce bag, 390 g) of Valencia rice
4 cups (950 mL) chicken stock
In a dutch oven, heat olive oil over medium-high heat. When oil is hot, add chicken, skin side down, until browned, about 5 minutes. Flip the chicken, using tongs, and cook on opposite side until golden brown, about 3 minutes. Transfer to plate and set aside.
Reduce heat to medium, add onion, and cook until translucent, about 7 minutes. Add garlic to the top of the onions and cook until fragrant; 2 minutes or so. Throw in tomatoes and red bell pepper. Using a wooden spoon, scrape the bottom of the pot removing any of the chicken fat pieces (hello! flavor!!). Next, add spices: cumin, tumeric, paprika, saffron, crushed red pepper, a teaspoon of salt and mix.
Dump in rice, being sure to coat with the tomato mixture. Place chicken atop of rice mixture, and pour just enough chicken stock to cover the rice, about 2 cups (475 mL). Bring the pot to a simmer and then reduce heat to low. Cook, covered, for about 45 to 50 minutes, and until rice is tender.
Note: Throughout the cooking process, I checked on it every 15-20 minutes or so and topped it off with about ¼ cup (60 mL) of stock each time. In the end, I added 4 cups (950 mL) of chicken stock total. Also, in the last 15 minutes, I salted to taste, adding about 1 teaspoon (5 mL) more of salt.

1 Pimentón Rojo picado en cuadritos

Authentic Puerto Rican Arroz con Pollo | Rice with Chicken | Amazing Recipe
Arroz con Pollo - a staple dish in many Puerto Rican households that is affordable, easy, and HUGE in flavor! Enjoy!
Ingredients:
3 1/2 cups long grain rice
2 - 3 lbs lightly seasoned chicken (chicken sections, deboned)
1/4 cup vegetable oil
1/2 cup chopped white onion
1 oz of either beef summer sausage, chopped pork bacon, or diced cooking ham
1/4 cup sofrito (I have 2 sofrito videos on my channel!)
2 garlic cloves, mashed
1/2 cup tomato sauce
2 tbsp diced pimientos
Spanish olives or alcaparrado
1 1/2 packets Goya Sazón
1 chicken bouillon
1/4 tsp oregano flakes
1/2 tsp black pepper
1 bay leaf
1 tsp salt
About 3 cups water (NOTE ????- If this doesn’t seem like enough water for 3.5 cups of long grain rice, remember, the chicken will continue to release moisture as the rice cooks! Therefore, adding less water for this specific rice dish will help prevent a mushy arroz con pollo! ????)

ARROZ CON POLLO EXAGERADO
8 presas de pollo
2 tazas de arroz
1 taza de cerveza rubia
1 tazas de agua y si tienes caldo de pollo mejor
1 cucharada de ajo molido
Sal y pimienta al gusto
1 cucharada de ají mirasol
3 cucharadas de ají amarillo
1 taza de zanahoria picada en cuadritos
1 taza de choclo desgranado
1 pimiento rojo picado
1 taza de alverjillas peladas
1 taza y media de culantro licuado
1 cebolla roja picada en cuadritos
Aceite vegetal
