How To make Arroz Verde
Jim Vorheis 1 1/2 c Unconverted long-grain rice
1/3 c Safflower oil, melted
-chicken fat, or melted lard 3 tb Finely chopped white onion
2 Chilies poblanos, charred,
-peeled, and cut in strips 4 c Chicken broth
1 Garlic clove, peeled and
-roughly chopped 1 c Firmly packed, roughly
-chopped flat-leaf parsley 1/2 c Firmly packed, roughly
-chopped epazote or cilantro Sea salt to taste Green Rice Put the rice into a bowl and pour very hot water over to cover; stir and set aside for 10 minutes. Drain in a strainer and rinse in cold water; drain again and set aside. Heat the oil in a heavy pan, stir the rice into it, and fry over fairly high heat, stirring and scraping the bottom of the pan, for about 5 minutes. Add the onion and chile strips and continue frying for 4 minutes or until the onion is translucent. Meanwhile, put 1 cup of the broth into a blender jar; add the garlic, parsley, and epazote and blend until smooth. Add this to the frying rice and continue frying and reducing the puree over quite high heat, stirring and scraping the bottom of the pan, until the rice is dry. Stir in the rest of the broth, add salt to taste, and cook over fairly high heat, uncovered, until the liquid has been absorbed and there are air holes in the rice. Cover with a towel and lid and continue cooking over low heat for 5 minutes. Remove from the heat and set aside, still covered, in a warm place for the rice to swell up. Ingredients
1 cup long grain white rice
2 poblano chiles, stem and seeds removed (optional)
1 jalapeño, stem and seeds removed (optional)
2 garlic cloves
1 small onion, cut in half
1/2 tsp kosher salt
2 cups chicken stock
3 tbsp vegetable oil
1/4 cup cilantro, chopped fine
Instructions
a medium sized bowl add the rice and cover with boiling water. Allow to soak for 15 minutes. Drain, rinse with cold water, shake off excess water and set aide.
Dry roast the poblanos, jalapeño and onion in a hot skillet until they start to blister and char slightly. Add to a blender along with the garlic, salt and chicken stock. Puree until smooth.
Add the oil to a medium saucepan over medium heat and cook the rice for 2 minutes or so, stirring to coat, until golden in color. Add the chile puree. Bring to a boil, cover and reduce to simmer for 20 minutes.
Remove from heat, add cilantro and fluff with fork. Cover again and let rest 10 minutes. Season to taste before serving.

Mexican Green Rice Recipe
2 poblanos peppers - stemmed and seeded
1 garlic clove — peeled and halved
1/2 cup approximately of cilantro leaves and stems
1 cup approximately of parsley leaves (no stems)
1 1/2 cups rice
3 cups water
Avocado oil
Salt
Blend the poblanos, cilantro, parsley and garlic with a cup of water until smooth.
Pour the green liquid into a measuring cup and add enough water to complete 3 cups. Make sure that you do not count the foam as part of your liquid.
Wash the rice thoroughly inside a sieve. It is ready when you no longer have cloudy water coming out of it.
Heat some oil in a pan and add the drained rice. Fry it, mixing constantly, until it is dry and changes color a bit.
Add the liquid and season with salt to taste.
Bring the liquid to a rolling boil, cover the pot, reduce the heat and cook on low for 20 minutes.
Check your rice.* If it is done, remove it from the heat and fluff it with a fork. Cover the pan and allow it to rest for 5 minutes. Serve and enjoy!
*If it is still a little hard and has liquid, let it cook for a few more minutes. If your heat was too high and all the liquid is gone but the rice is still a little hard, add 1/4 cup of water and finish cooking it.

- 2 cups filtered water
- 280 grs baby spinach
- 2 tablespoons extra virgin olive oil

- ½ cup green peas
- 1 tablespoon edamame
- 2 carrots (peeled and chopped in small cubes)
- ⅓ cup chicken broth
- 4 tablespoons red pepper (chopped in small cubes)
