How To make Arroz Con Queso/Crockpot
Ingredients
1 1/2
cup
rice, long-grain, converted
1
cup
whole tomatoes, mashed (16 oz)
1
cup
mexican style beans (16 oz)
3
each
garlic cloves, minced
1
each
onion, finely chopped
2
tablespoon
vegetable oil
1
cup
cottage cheese
1
cup
green chili peppers, drained (4-oz)
2
cup
montery jack cheese, grated
Directions:
Mix thoroughly all ingredients except one cup of the grated cheese. Pour mixture into well-greased crockpot. Cover and cook on low setting for 6 to 9 hours. Just before serving, sprinkle with reserved grated cheese.
Makes 6 to 8 servings.

-3 Boneless Skinless Chicken Breast
-3C of Chicken Broth
- 1 jar of Salsa
- 1 1/2C of Rice
- 1/2 jar of jalapenos
- 1/2C of Taco Seasoning
- Add Sour to serve
Place on high for 3 1/2hrs mixing every hour!!! ENJOY

In today's video, we'll be making some cozy fall recipes. I don't know about you, but Mexican food is comfort food to me and comfort food definitely lends itself well to fall. It's started to cool down here and I love it! We'll be making Oven Baked Chicken Chimichangas with a Mexican White Sauce, Mexican Rice and a Copycat Chili's Skillet Queso, but it will be made in the crockpot, so it's perfect for Crocktober! But I'm saving something delicious for dessert! We'll be making Cream Cheese Bars (or also called Sopapilla Cheesecake). This was a delicious family dinner and so easy! I always enjoy some easy dinner recipes and easy dessert recipes too! Come along and cook with me today! Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law – Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!
