Arroz con Pollo???????? w/ Salsa Criolla ???????? Peruvian Chicken & Rice ???? One Pot Dinner
Make this delicious one pot meal & you can have a complete dinner ready in about an hour. Healthy & comforting!
Peruvian Arroz Con Pollo w/ Salsa Criolla
For the Salsa Criolla:
½ Red Onion, thinly sliced
1 Jalapeno, thinly sliced
2 Tablespoons Cilantro, chopped
Juice of 2 small limes or 1 large
Good pinch of salt (about 1/8th teaspoon) or to taste
*Combine the above ingredients together in bowl. Mix well & set aside for 15-20 minutes or longer
For the Arroz con Pollo:
2 cups Long Grain White Rice, rinsed & drained well
4 Chicken Breasts or 6 Chicken Thighs &/or Drumsticks (Bone
1 Large bunch Cilantro, rough chop
4 whole cloves Garlic, peeled
1 medium Onion, cut into large pieces
1 Jalapeno, cut into large pieces
2 cups Chicken Broth – I used Low Sodium
1 cup Frozen Peas & Carrots
1 small can Hominy, rinsed & drained- or 1/2 - 3/4 cup Frozen Corn
1 ½ teaspoons Paprika
1 ½ teaspoons Ground Cumin
Extra Virgin Olive Oil
Salt/ Black Pepper to taste
In Blender: Add chicken broth, cilantro, onion, garlic, jalapeno, paprika, cumin, ½ teaspoon black pepper & 1 ½ - 2 teaspoons salt. Blend on high for about 30 seconds. Set aside.
Season chicken pieces with some salt & pepper.
Heat stockpot w/ lid over medium heat. Add in just enough olive oil to just coat the bottom of the pot. Brown chicken in batches about 3-4 minutes per side starting with the skin side down. Remove and set aside.
Add a little more oil to pot if needed then add in the rice. Stir frequently for 2-3 minutes to lightly toast the rice. Add in 3 ½ cups of the green sauce (give it a quick blitz or stir to mix everything up again) to the pot with the rice, then add in the peas, carrots & corn. Stir well & let come up to a boil. As soon as it starts to boil, add in your chicken pieces skin side up but not fully sumberged, plus any juices that may have accumulated.
Reduce heat to simmer, cover & let cook for 40-50 minutes.
When chicken is cooked (internal temperature of 165 degrees), remove to a plate and gently fluff the rice until everything is mixed together well.
Dish up rice & top with chicken. Top with salsa criolla

As you can see, not much is needed to prepare this dish. You can feed
4-5 people with this recipe and still have some left over.
The flavor of the chicken stock is what makes it so delicious.
The more you make this dish the better you get at it. The trick is the
broth, if your rice seems that its hard, its ok to add more broth about
1/2 cup then cover and let it stand for another 5 minutes.
Serve with a side of refried beans and tortillas.

- 200 gr de arroz redondo
- 4 muslos de pollo
- 1 cebolla mediana
- ½ pimiento rojo
- ½ pimiento verde
- 1 zanahoria

1 ½ pounds boneless skinless chicken thighs
Adobo seasoning:
1 1/2 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon chili powder
