How To make Armenian Style Zucchini
2 lb Zucchini, washed and trimmed
1 c Ground lamb shoulder*
1/2 c Raw rice
1 Small onion, chopped fine
1 tb Chopped parsley
1/2 c Stewed tomatoes
Salt Black pepper *Note: May use lamb patties. Peel the zucchini and cut into 3 inch lengths. Scoop out the centers. Soak the vegetable in cold salted water about one half hour. mix the lamb with the rice, onion, parsley, tomatoes, salt and pepper. Drain the zucchini and fill the hollows with the lamb mixture. Arrange in a saucepan and add water to the depth of one inch. The water should not reach more than halfway up the sides of the zucchini. Cover the pan tightly and simmer over low heat until the rice is>>> tender, about one hour. Check from time to time to see that the water has not evaporated. Source: New york Times Cookbook.

Today's dish is Karniyarik which means split belly in Turkish and as you may guess, these fried eggplants are cut and stuffed with a ragout like, rich ground beef mixture with spicy, aromatic onions, chilies and tomatoes. Ingredients:
• 3 - 4 eggplants (medium to small size), approx. 1 kg
• 1 onion
• 300 g ground beef
• 4-5 green chili
• 2 cloves of garlic
• 2 tomatoes
• ½ cup parsley chopped
• 4 tbsp olive oil
• 1 tbsp chili paste
• 1 tbsp tomato paste
• 1 tsp chili flakes
• 1 tsp salt and 1 tsp black pepper to season

ucchinis stuffed with fried minced meat and onions in yogurt sauce is one of the most delicious Levantine recipes in general and as delicious as it is, it is also an easy and quick recipe to make.
For this recipe we choose very small zucchinis because here we will stuff them with meat, not with rice, which needs large zucchinis. Wash the zucchinis well, get rid of the funnel, then core them well and gently so as not to puncture any of them. For this purpose, I used the apple corer because it gives us the desired result quickly, but we may need to thin some of the zucchinis walls using a traditional zucchini corer to get rid of the excess pulp.
Put the butter and oil in the frying pan and fry the pine nuts a little, then add the onions and saute them until tender, then add the meat, spices, and salt. Stir and cook until the meat is done and the liquid dries out, then turn off the heat. Stuff the zucchinis and set aside to prepare the yogurt sauce.
Add the yogurt to the cooking pot and mix it well with the starch, one egg, and a pinch of salt before turning on the heat, then add water and mix well again until it is homogeneous. Turn on the heat and stir constantly until it boils. Add the stuffed zucchinis and boil them in the yogurt sauce a little, then fry some crushed garlic and add it to the yogurt. Stir and leave to cook for 5 minutes, then turn off the heat and serve with the rice.

في هذه وصفه مخشي الكوسا باللبن نختار الكوسا صغير الحجم جدا لاننا هنا نحشيه باللحمه وليس مثل الارز يحتاج الى حجم كبير
نغسل الكوسا جيدا ونتخلص من القمع بعدها نحفره جيدا وبلطف حتى لا نثقبه واستخدمت اداه ثقب التفاح لانها تعطعينا النتيجه المطلوبه بسرعه وفقط قد نحتاج الى ترقيق بعض الحبات باستخدام اداه الحفر التقليديه وفقط للتخلص من اللب الزائد
نضع الزبده والزيت في المقلاه ونقلي الصنوبر قليلا ثم نضيف البصل ونذبله ثم اللحم والهارات والملح ونقلبه حتى تنضج اللحمه ويجف السائل ثم نطفئ النار
نحشي الكوسا ونضعه جانبا لنحضر صوص اللبن الرائب نضيف اللبن في طنجره ونخلطه مع النشا والبيضه والملح جيدا قبل وضعه على النار ثم نضيف الماء ونخلطه جيدا حتى يتجانس ثم نشغل النار ونحرك باستمرار
حتى الغليان ضيف الكوسا ونغليه باللبن قليلا ثم نقلي الثوم المهروس ونسكبه على اللبن ونحرك ونتركه 5 دقائق ثم نطفئ النارونقدمه مع الارز المفلفل
