How To make Apricot Dreams
1 1/4 c Flour
1/4 c Sugar
1 1/2 ts Baking powder
1/4 ts Salt
1/2 c Butter or margarine;
-softened 1 3 oz. packag cream cheese
--- softened 1/2 c Flaked coconut
1/2 c Apricot preserves
Frosting 1 c Powdered sugar
1/4 c Apricot preserves
1 tb Butter or margarine;
-softened Recipe by: Maureen Sullivan Preheat oven to 350. Combine flour, sugar, baking powder andsalt in food processor. Pulse in butter and cream cheese until mixture is crumbly. Add coconut and 1/2 cup of preserves. Blend until just moistened. Be careful not to over mix batter. Cookies should be light and and airy. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 15-18 minutes. Makes about 3 dozen. Frosting: In a small bowl, combine powdered sugar, preserves and butter. Spread on cookies after they have cooled. -----

APRICOT DREAM BARS - A Step by Step Recipe by “In The Kitchen With BelindaD”.

► INGREDIENTS
Prep Time: 10 minutes
Cook Time: 40 minutes
Serves approximately: 24 small Bars or 12 medium Bars
CRUST:
2 Sticks pure salted butter (softened at room temperature)
1 C finely chopped pecans
1/2 C white sugar
2 C flour
Sprinkle of salt
Combine above ingredients and press into a greased 13”X9” pan. Bake for 15 minutes @ 350 degrees. Remove from oven. Let set 5 minutes.
FILLING
1 (12-16 oz jar) apricot preserves
3 egg whites
1 C powered sugar
3/4 C chopped pecans
► COOKING INSTRUCTIONS
Spread 1 (12-16 oz ) jar of apricot preserves over hot crust. Blend with egg whites and powered sugar until smooth approximately 15-20 minutes. Spread egg white mixture over preserves and sprinkle pecans on top. Bake at 375 degrees for 30 minutes until medium brown. Cut while still warm. CHEERS!
