These apple pie bars taste just like an apple pie! The apple filling has a hint of cinnamon and is topped with a brown sugar crumble.

Ingredients
4 Large Apples Chopped
1 c Sugar 225 g
1/4 c Corn Starch 35 g
1/2 t Cinnamon 1 g
Pinch of Salt
4 T Unsalted Butter Melted 56 g
1/2 T Vanilla Extract 7 g
2 t Lemon Juice 11g
Crust
1-3/4 c All Purpose Flour 302 g
1/2 c Sugar 123 g
Pinch Salt
11 T Unsalted Butter Melted 154 g
Crumble Topping
1/3 c Dark Brown Sugar 64 g
1 T Sugar 11 g
2/3 c All Purpose Flour 94 g
5 T Unsalted Butter Melted 70 g

How to Make Apple Pie Bars
Here’s how to make Fantastic Apple Pie Bars. These Apple Pie Bars are my Go To for the whole Holiday season. They are a Crowd Pleaser and so good you could serve them to company with a scoop of vanilla ice cream on top. Yum!
FOR THE CRUST:
1 pound unsalted butter, room temperature
¾ cup granulated sugar
½ cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 ½ teaspoons kosher salt
½ cup chopped walnuts (optional)
FOR THE APPLE FILLING:
1 ½ pounds Granny Smith apples, peeled, quartered, cored, sliced ⅛ inch thick ( 3 large)
1 ½ pounds Honey-crisp or Golden Delicious apples, peeled, quartered, cored, sliced ⅛ inch thick
2 tablespoons freshly squeezed lemon juice
¼ cup granulated sugar
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
4 tablespoons unsalted butter
DIRECTIONS:
Preheat oven to 375 degrees
For the crust, place the butter, granulated sugar , brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13 inch baking pan and press it lightly with floured hands on the bottom and ½ inch up the sides.
Refrigerate for 20 minutes. Bake for 18-20 minutes, until the crust is golden brown, and set aside to cool.
Cobi Quick Tip: Don’t over cook the bottom crust
Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts (if using) and cinnamon, and mix on low speed to combine. Set aside.
Reduce the oven to 350 degrees
For the filling, combine the Granny Smith and Honey Crisp apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon and nutmeg and mix well. Melt the butter in a large pt, add the apples, and simmer over medium heat to medium -low heat, stirring often for 12-15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a ½ inch border.
Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples. Bake for 25-30 minutes, until the topping is browned. Cool completely and cut into bars.

INGREDIENTS
For the granola crust:
- 2 3/4 cups rolled oats
- 1 3/4 cups all-purpose flour
- 3/4 cup light brown sugar
- 1/2 cup white granulated sugar
- 1 tsp cinnamon
- 1 tsp kosher salt
- 16 tbsp unsalted butter cold and cut into small pieces
For the apple pie filling:
- 4 apples (such as Braeburn, Honeycrisp, or Pink Lady)
- 1/4 cup all-purpose flour
- 1/4 cup white granulated sugar
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/4 cup maple syrup
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 10x14 baking pan and set it aside.
For the crust:
- In a large bowl, mix together the rolled oats, flour, brown sugar, white granulated sugar, cinnamon, and kosher salt.
- Add the cubes of cold butter and toss with the dry ingredients. Work the butter into the dry mixture until it resembles wet sand with some pea-sized pieces of butter. Reserve 2 cups of the prepared crust and set it aside.
- Press the remaining crust into a 10x14 pan (also called a jelly roll-size pan). Firmly and evenly press the crust, making sure to press the crust mixture up the sides of the pan. Bake the crust for 15 minutes. Once baked, remove it from the oven and set aside to cool.
For the filling
- Prepare the filling by coring and thinly slicing the apples. In a large bowl, combine the prepared apples, flour, white granulated sugar, maple syrup, cinnamon, and allspice. Stir until well combined, then pour the mixture onto the baked crust.
- Spread the apples out into an even layer, overlapping as needed to fit all the apples. Sprinkle on the reserved 2 cups of prepared crust topping. Bake in the 350°F preheated oven until the apples are tender, 35-45 minutes. Remove from the oven and cool one hour before enjoying them!

Ingredients:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup butter, melted
1/3 cup brown sugar
1/3 cup sugar
1 egg
1 teaspoon vanilla
1/3 cup milk
1 cup chopped Macoun apple (1 large)
1/2 cup chopped walnuts
cinnamon sugar mixture
Preparation:
In a small bowl, combine flour, salt, and baking powder, and cinnamon. In a large bowl, mix sugar, brown sugar and egg.
Add in the melted butter, vanilla, and milk. Blend well with a wire whisk.
Add in the flour mixture, apples, and nuts.
Gently and thoroughly mix together with a rubber spatula. Scrape into a greased 8X8 (brownie pan).
Sprinkle top with cinnamon sugar mixture, bake in a 350 degree oven for 25-30 minutes.
