How To make Apple Ricotta Pie
3/4 c Grape-Nuts cereal
2 lg Apples (Rome, Beauty),
-peeled, cored, and -sliced thin 1 ts Lemon rind, grated
1 ts Lemon juice
1/2 ts Cinnamon
1 1/2 c Ricotta
1/3 c Sugar
1 Egg white, and
1 Egg, whole, lightly beaten
1 c Yogurt, plain
Sprinkle the cereal on the bottom of a greased 8" springform cake pan. Arrange the apple slices over the cereal and sprinkle them with the lemon rind, lemon juice and cinnamon. Combine the ricotta, sugar, egg white and whole egg and yogurt in a medium bowl, mixing with a spoon until smooth. Pour evenly over the apples. Bake in a preheated 350 degrees oven for 45 minutes. When cool, go around the circumference of the pan with a knife before removing the side. -----

Ingredients

Instructions
Put the ricotta in a bowl, soften it with a fork. Add egg, sugar, starch, baking powder and milk.
Whisk the ingredients until it becomes a thick cream without lumps.
Wash and peel the apples.
Cut the apples into thin slices.
Pour the dough in a cake pan lined with parchment paper.
Top it with slices of apple.
Bake in preheated oven at 160°C for about 40 minutes.
Once baked, let the pie cool and then serve it with vanilla icing sugar.
Notes
If you can’t find ricotta in a store near you, you can make it yourself. In a saucepan, heat 8 cups whole milk and ½ teaspoon salt to 185°F. Lower the heat, and add 3 tablespoons of lemon juice. Wait for curds to form, then allow to stand for 20 minutes. Pour the curds into a cheesecloth and allow to drain. If you want creamy ricotta, it needs to sit for 3-5 minutes, and for dryer ricotta, it will take up to 20 minutes.

The easiest ricotta apple cake recipe
Ricotta Apple Cake. You really can't go wrong with this one. ????
It's an easy mix and bake recipe. I prepared the ingredients already measured and my older one did it all by himself. LOL, next time I will have him measure too!
The final result is fluffy, delicate and not oversweet. Two apples needed. One inside and one on top.
Toddler tip: my little one didn't like the apple on top. He said it's sticky and removed every single piece. So...for a less beautiful cake but maybe more picky eater friendly you can chop both apples and add them in the mix, skipping the top decoration.

INGREDIENTS:
250gr. all purpose flour (1 3/4 cup)
250gr. ricotta (1 cup)
150gr. sugar (3/4 cup)
50ml milk (3 TBSP)
2 large eggs (I used duck eggs!!)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 Tbsp vanilla
2 large apples (Fuji or Pink Lady), peeled. One chopped, one sliced.
Mix everything in the sequence you like. Add the apples at the end. One apple chopped inside and one for decoration on top. Bake to 400F for 50 min. Dust with powdered sugar on top. (optional).

1 packet of baking powder
250g ricotta cheese
DIRECTIONS
Beat the eggs together with some salt and gradually add the sugar. Gradually add the flour, then mix in the ricotta, half a glass of milk and the apples ( previously cut into cubes). Add the baking powder, mix the batter and pour it into a buttered cake pan. Cover the top of the cake with sliced apples, brown sugar and cinnamon. Bake at 180°C for 50 minutes. We suggest using a toothpick to check if the cake is done.
