2 lg McIntosh apples
-cored, sliced 1 1/2 ts Lemon juice
5 tb Fructose or honey
-or equivalent sugar substit 1/2 ts Cinnamon
pn Numteg (optional) pn Allspice (optional) 1 c Self-rising all-purpose flou
-or cake flour or pancake -mix 1 lg Egg
3 tb Brown sugar
2/3 c Cold water
1 c Boiling water
Arrange the apple slices neatly in rows of concentric circles in a square or round 9-inch nonstick cake pan which has been sprayed with cooking spray. Sprinkle lightly with lemon juice, sweetener, and spices. Combine the flour, egg, brown sugar, and cold water; beat smooth. Spoon the batter over the apples. Sprinkle the top of the batter lightly with additional spices. Pour the boiling water in a thin stream over the batter. Bake uncovered, in a preheated 375 oven, for 30 minutes. To serve: Cut into squares or wedges; invert each serving on a dessert plate. Spoon on some of the apple pudding sauce that forms in the bottom of the pan. Ambrosia Apple Pudding Cake
These pudding cakes always provide a fun surprise when you dig your spoon in. They’re also so much easier to make than your guests might think. And, with the addition of Ambrosia apples and less sugar than normal pudding cakes - they’re just a little bit healthier too.
In this recipe, we used individual-sized ramekins but you can use an 8” square or round pan. You will want to ensure it has some depth otherwise, your pudding sauce will bubble over the sides. For this reason, it’s a good idea to place your pan or ramekins on a cookie sheet when you bake.
You can put the sauce in the pan first or pour it over the batter - it works out either way. And, don’t be shy with the sauce. Make sure you use it all up.
In this recipe, we peeled the Ambrosia apples but you don’t need to. You can leave the skins on, and if you want the Ambrosia apples to be prominent (and why wouldn’t you?), just cut the Ambrosia pieces a little larger.
We love to serve these warm, dusted with a little icing sugar or cinnamon sugar. You could also add a dollop of whipped cream or vanilla ice cream but they certainly don’t need it. They are a real treat, all on their own.
This recipe makes 4-6 individual servings.
Ingredients:
For the sauce:
3/4 cup brown sugar (packed)
1 Tbsp cornstarch
1 Tbsp butter (softened)
½ tsp salt
1½ cups boiling water
For the cake batter:
2 medium Ambrosia apples (peeled & chopped)
1 cup flour
1⁄2 cup brown sugar
1⁄4 teaspoon baking soda
2 teaspoons baking powder
¼ tsp cinnamon
pinch of salt
1 tsp vanilla
1 egg
2 tbsp melted butter
1⁄2 cup milk
Method:
Preheat oven to 350°F.
Grease pan or ramekins with butter.
Combine dry ingredients for batter.
Combine wet ingredients for batter.
Add wet ingredients into dry ingredients and stir.
Add chopped Ambrosia apples to batter.
Pour sauce into pan (or divide between ramekins). Add batter.
Bake at 350° F for 30 - 35 minutes (if using ramekins) or 50 mins (if using a larger pan) until golden brown on top.
Let cool for 5 (sauce is too hot to eat right away).
Dust with icing sugar and serve warm.

Easy Apple Self Saucing Pudding
Oh what a yummy pudding this is. It’s the sort of thing that Grandma used to make all those years ago. The pudding is so easy to make, but then served with ice cream and caramel sauce it scores 11 out of 10 for flavour. Scroll down for the full recipe and instructions.
What You’ll Need
25g chopped butter
50g melted butter
750g apples, cored, peeled, diced (I used Pink Lady)
1 cup brown sugar divided into ¼ cup, ¼ cup and ½ cup
1 egg
80ml milk
3/4 cup self-raising flour
80ml boiling water
1/4 cup golden syrup
vanilla ice-cream to serve
caramel topping, to serve
What to Do
Pre-heat oven to 200 C.
Put chopped butter into a small saucepan over medium heat. Add diced apples and 1/4 cup of sugar and cook covered with a lid, stirring occassionally, for 8 to 10 minutes until apples are beginning to soften and lightly golden.
Spoon into a 20cm x 18cm shallow baking dish.
Put 50g melted butter and 1/4 cup of sugar into a bowl. Whisk until combined. Add egg and milk and whisk again.
Sift in flour then stir until combined.
Pour batter over apples and smooth surface.
In a jug, stir boiling water, golden syrup and remaining 1/2 cup brown sugar until combined, then gently pour over back of large spoon onto batter. Bake for 25 to 30 minutes or until batter turns golden.
Serve with ice-cream and caramel sauce.

This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!
