How To make Apple Pecan Bread Pudding
Ingredients

cup
pecans, coarsely chopped
3
each
eggs
8
each
raisin bread slices, diced
2
cup
half & half OR milk
2
each
apples, green
1/4
cup
bourbon OR brandy
1
cup
sugar
1/4
cup
butter OR margarine, melted
1
teaspoon
cinnamon
1/2
teaspoon
nutmeg
1
vanilla ice cream (optional)
Directions:
Preheat oven to 350 degrees. Spread pecans in a shallow baking pan and bake until golden, about 8-10 minutes, stirring occasionally.
Meanwhile, place bread cubes in a greased 3 quart or larger slow cooker. Peel, core and thinly slice the apples. Mix lightly together the sugar, cinnamon and nutmeg, add eggs and mix well. Blend in half and half or milk and then stir in bourbon or brandy.
Lightly mix pecans with bread and apples. Pour egg mixture over bread. Drizzle with butter. Cover and cook on low until apples are tender when pierced and custard is set, about 3 1/2 to 4 1/2 hours.
Let pudding stand, covered, for about 15 minutes. Serve warm with ice cream, if desired.

Caramel Pecan Bread Pudding
For the bread and custard mixture
4c milk
1 stick of salted butter
6 eggs
1tbsp. vanilla
1tbsp. cinnamon
1/2c chopped prunes or raisins
12 mini brioche buns
For the topping
1 stick of salted butter
1c chopped pecans
1c sugar
1egg beaten
In a large bowl, beat eggs and add milk, cinnamon and butter. In a large baking pan lightly greased, put the crumbled or cubed bread. Pour the custard mixture over the bread and bake in a 325 degree oven for approximately one hour. When golden on top and it jiggles slightly in the middle, the custard bread pudding is ready.
For the topping, Melt butter. Add sugar and egg with cinnamon to warm mixture. Never heat on high and never bring to a boil. Cook about 4 minutes and pour over the bread pudding. Serve when slightly cooled.
There is no need to serve with anything and is delicious on its own,
