What dessert is as american as apple pie? Pretty much nothing. Chefs BC Hoffman and Judith Jones put classic recipes by Sherry Yard and Martha Stewart to the test to figure out which classic apple pie is the best out there. Will it be the simple apple pie recipe by Martha Stewart, with tart apples and a cheddar crust, or will it be Sherry Yard's dried fruit and apple pie with a classic lattice crust? Both were delicious, but only one took the recipe wars prize.

Pie Crust for 1-9 pie
Apple filling:
1 large Granny Smith apple
1 tablespoon butter
1 tablespoon sugar
1/4 teaspoon ground cinnamon
Peach Filling:
3-4 peaches
1 teaspoon sugar
1/4 teaspoon vanilla extract
Oil for frying (1/2 deep, about 2 cups)

Here is Claire’s, inspired by the pies her mom used to make when she was a kid and informed by all the pie-making wisdom she’s gathered in her baking lifetime. Sour Cherry Pie

Cherry Pitter, 9-inch pie plate
Ingredients
Flaky All-Butter Pie Dough, Almond Variation (Pg 337)
All-purpose flour, for rolling out
8 cups fresh pitted sour cherries (2.5 lb / 1.12kg), from about 3 pounds (1.36kg)
1 1/4 cups granulated sugar (8.8 oz / 250g)
5 tablespoons cornstarch (1.6 oz / 44g)
2 teaspoons finely grated lemon zest
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamon
1/4 teaspoon Diamond Crystal kosher salt
1/4 teaspoon almond extract
1 large egg, beaten
Demerara sugar, for sprinkling the top

Table Recipes | Deconstructed Apple Pie
As we gather around The Table this fall, we’re cookin’ some of your favorites! This recipe comes from Renee S. Renee shared, “My mom (who went to heaven 26 yrs ago) would make this dessert. My mom invited people to her table most Sundays. Those who didn't have a place to go, from the elderly, to a disabled man, to any who couldn’t feed themselves. She always opened up her home to those who didn't have much. Its recipe is full of sweet goodness!”
Ingredients for Apple Base:
3/4 c sugar
1/4 c shortening
1 cup flour
1 tsp. baking soda
1 tsp. cinnamon mix like pie crust
3 large apples, chopped
1 egg beaten
Ingredients for Topping:
1/2 c. brown sugar
1/2 c. white sugar
1/4 c. butter
1/2 c. cream
Apple Base Instructions:
Throw it all together, pour into a greased 8×10 pan (or double ingredients in a 9×13 pan), and bake at 350 for 35 minutes.
Topping Instructions:
Mix Carmel sauce, brown sugar, white sugar, butter, cream, bring to boil, then remove and pour over cake.
