How To make Apple Oatmeal Cookies
1 1/2 cups quick cooking oatmeal
3/4 cup flour
3/4 cup whole wheat flour
1/2 cup brown sugar
packed
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 cup raisins
1 cup apple, peeled & :
finely chopped
1 egg -- slightly beaten
1/2 cup honey
1/2 cup vegetable oil
1/3 cup milk
Preheat oven to 375. In a medium bowl, combine oats, flours, baking powder, baking soda, salt and cinnamon. Stir to combine. Stir in raisins and apples. In a large bowl, combine egg, honey, oil and milk. Stir in dry ingredients. Mix to form a smooth batter. Drop batter onto ungreased baking sheets using a rounded teaspoon of dough for each cookie, leaving 2" of space between each. Dip fingers in water; press dough down to about 1 1/2" diameter. Bake for 10 to 12 minutes or until lightly golden. Transfer cookies to rack to cool.

Apples and cinnamon in a cookie! Couldn't be better.
Makes about 6 dozen.
Ingredients:
2 cups (500 mL) all-purpose flour
1 Tbsp (15 mL) ground cinnamon
1 tsp (5 mL) baking soda
1/2 tsp (2 mL) salt
1 cup (250 mL) softened butter
1 cup (250 mL) packed brown sugar
1 cup (250 mL) granulated sugar
2 eggs
1 tsp (5 mL) pure vanilla extract
2 cups (500 mL) quick-cooking oats
1 cup (250 mL) chopped pecans
1/2 cup (125 mL) chopped dried apples
Method:
Preheat oven to 350°F. (180ºC)
Cream butter and sugars in large bowl with electric mixer on medium speed until light and fluffy.
Add eggs and vanilla; mix well.
Mix flour, cinnamon, baking soda and salt in a bowl then set aside.
Gradually beat flour mixture into butter / egg on low speed until well mixed.
Stir in oats, pecans and apples.
Drop by rounded tablespoons onto un-greased baking sheets.
Bake 10 to 12 minutes or until lightly browned.
Cool on baking sheets 1 minute.
Remove to wire racks to cool completely.

Easy Instant Apple Oatmeal Cookies
This recipe is adapted from my previous Easy Instant Oatmeal Raisin Cookies. I use butter in place of shortening and adjusted the amount of flour and instant oatmeal. Taste delicious.
This recipe would be great with a chopped fresh apple in it but I did not have an apple around when I made the cookies. Also, I made this recipe with butter instead of shortening.
Note: The Instant apple & cinnamon oatmeal contains dried apple pieces.
Ingredients:
4 envelopes of instant apple & cinnamon-flavored oatmeal
1/2 cup sugar or brown sugar
1 stick unsalted butter, softened
1 large egg
1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon or apple pie spice
2-4 tbsp milk, if needed
1 cup chopped fresh apple, optional
Method:
1. Mix butter and sugar together until creamy, then add egg, and vanilla, and mix well.
2. Mix all of the dry ingredients together including instant oatmeal, and add it into the wet mixture, mix just until combined.
3. Add milk if needed, and stir in chopped apple if using.
4. Scoop the dough into balls onto a lined baking sheet about 2 apart. Bake at 375 deg. F. for 10-12 minutes.
5. Let the cookies stay in the pan for 10 minutes before removing them to a wire rack to cool.
Note: You can make caramel icing for drizzling on the cookies if wanted.
