How To make Apple Filled Oatmeal Crunch Cookies
3/4 c Butter-flavored shortening
1 1/4 c Brown sugar
1/3 c Milk
1 1/2 ts Vanilla
2 1/2 c Quick-cooking oats; uncooked
1 c Wheat germ
1 c Flour
1/2 ts Baking soda
1/2 ts Salt
1/4 ts Cinnamon
1/4 ts Nutmeg
1 c Pecans
1 c Apple pie filling
--coarsely chop the filling
Preheat oven to 375. Grease baking sheets with shortening. In large mixer bowl combine shortening, sugar, egg, milk and vanilla. Beat at medium spped of mixer until well-blended. In another bowl, combine oats, wheat germ, flour, baking soda, salt, cinnamon andnutmeg. Mix into creamed mixture at low speed just until blended. Stir in nuts. Form dough into 1 inch balls. Place 2 inches apart on baking sheets. Flatten slightly by hand. Bake 5 to 7 minutes. Remove from oven. Press center of cookies with back of teaspoon. Fill indentation with about 1 teaspoon apple pie filling. Bake 5 minutes or until lightly browned. Do not overbake. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely. -----

RECIPE ????
▢ 2 cups all-purpose flour (or gluten free flour)
▢ 1 ½ tsp cinnamon
▢ 1 tsp baking soda
▢ 1 tsp salt
▢ 1 cup (2 sticks) vegan butter, softened
▢ 1 cup white sugar
▢ 1 cup brown sugar, packed
▢ 2 flax eggs
▢ 1 tsp vanilla extract
▢ 3 cups old fashion oats (or gluten free rolled oats)
▢ 2 cups green apples, diced
▢ 1/3 cup vegan salted caramel
1.Preheat oven to 350°F. Parchment line two baking trays.
2.In a mixing bowl, add all dry ingredients (flour, cinnamon, baking soda, salt). Mix to combine.
3.In another bowl, add butter and both sugar. Beat until light and fluffy. Add flax eggs and vanilla, beat until just combined. Add dry mixture and beat until combined again.
4.Add oats, using a wooden spoon, incorporate. Add diced apples and fold in. Scoop onto baking trays. Using a squeeze bottle, squeeze salted caramel into cookies in different spots.
5.Bake for 20-22 mins or until golden brown. Let cool and serve. Optionally, squeeze more caramel on cookies then serve.

Bowl 1: Dry Ingredients
Mix together so that it'll be even when added to wet ingredients.
1 1/4 cup Flour
1 1/4 cup Rolled Oats
1 tsp Pumpkin Spice Mix
1/2 tsp Baking Soda
1/4 tsp Salt
Bowl 2: Wet ingredients
Cream together
1/2 cup Butter, softened
3/4 cup packed Brown Sugar
Add in
1 Egg
1 tsp Vanilla Extract
once they are well combined, add in dry ingredients a little at a time to prevent lumps from forming. Finally, add in
1 cup finely chopped Apple (peeled works best)
tossed in Lemon Juice to coat.
Place on a lined cookie sheet (you can use tablespoon to drop them or you can form them by hand).
Bake in an oven preheated to 350F for about 15 minutes. Allow to cool completely before storing.
