How To make Apple Date Muffins
3/4 c Whole wheat flour
1 c All purpose flour
1 c Wheat bran
1 t Baking powder
1 t Baking soda
1 t Cinnamon
1/3 c Dates
chopped
1 Egg :
lightly beaten
1/4 c Packed brown sugar
2 tb Vegetable oil
1 c Low-fat milk
1 c Apple -- peeled, grated
In a large bowl combine the whole wheat and all purpose flours, bran, baking powder, baking soda and cinnamon. Stir in the dates. In another bowl, bea t the egg with sugar and oil until well mixed, then stir in the milk and ap ple. Pour into the flour mixture and stir just enough to moisten, being car eful not to overmix. Spoon into nonstick or paper-lined medium muffin tins, filling almost to the top. Bake at 375 degrees (F) for about 20 minutes, or until firm to the touch. Date Muffins
The perfect date muffins that can be easily whipped up for breakfast or a brunch treat.
Ingredients
1/2 cup chopped dates
1/2 cup boiling water
1/4 cup melted butter
1/2 cup Natura Light brown sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts or pecans
Method:
1. Place dates in a small bowl and add boiling water; let stand for 10 minutes (do not drain).
2. In a small bowl, beat butter and sugar until creamy. Beat in egg.
3. Combine the flour, baking powder, baking soda and cinnamon; fold in the date mixture just until blended. Stir in walnuts or pecans.
4. Fill muffin cases two-thirds full. Bake at 180 degrees for 15-20 minutes or until a toothpick comes out clean.
5. Serve best with a cup of coffee. Enjoy !!!
