How To make Appetizer Egg Rolls
1/2 lb Pork; Boneless, Cut Julienne
1 Onion; Small, Sliced
1 c Cabbage; Green Or Chinese *
2 tb Vegetable Oil
1/2 c Mushrooms; Sliced
1/4 c Sprouts; Bean Or Alfalfa
1/4 c Currants
1/4 c Almonds; Slivered
1 ts Cornstarch
2 tb Sherry; Dry
1 tb Soy Sauce
1/2 ts Ginger
12 Egg Roll Wrappers; Abt 6" Sq
;Oil For Deep Fat Frying
GINGER APRICOT SAUCE:
1/4 c Apricots; Dried (Abt. 10)
1/4 c Sugar
1 ts Ginger
1/4 ts Salt
1 tb Lemon Juice
* Cabbage should be shredded. ++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ Saute the pork, onion, and cabbage in hot oil until lightly browned. Stir in the mushrooms, bean sprouts, currants, and almonds and saute, stirring for 1 minute. Dissolve the cornstarch in 2 T water, and combine with sherry, soy sauce, and ginger; add to the pork mixture and bring to a boil, stirring. Remove from heat and cool. Stack the egg roll wrappers and cut in half to form rectangles. Forming one roll at a time, place a heaping a teaspoonful of pork mixture on one end of rectangle, moisten the long edges, and roll up. Press the edges together to seal. Egg roll may be prepared to this point, then refrigerated for several hours or overnight or frozen for several days before frying. Adjust time for browining. If rolls are frozen, let them thaw before cooking. Heat the oil to 375 degrees F. and fry the egg rolls, 4 or 5 at a time, until golden brown and crisp on all sides. Frying will take about 4 to 5 minutes; turn rolls once. Drain on paper towels and keep warm while frying the remaining rolls. Serve with warm Ginger Apricot Sauce. GINGER APRICOT SAUCE: Combine the apricots, sugar, ginger, and salt with 3/4 cup water in a small saucepan and bring to a boil. Reduce heat and simmer, uncoverd, for 5 minutes. Pour the mixture into a blender container or food processor.
Add lemon juice, cover and process until smooth. Serve warm.

When making this recipe you're going to want to make sure that you have a big enough pan to hold all the sliced veggies and ground pork. We used the Ballarini Firenze Wok and it did a great job of frying up all the veggies and meat, without feeling like it was overfilled. Also, the non-stick surface make the cooking and cleanup a breeze. If you love egg rolls as much as I do, then this recipe is a definite must-try!

1-2 stalks celery
1/2 onion
2 tbsp butter
Eggroll Wrappers (Found in the produce section)
1/4-1/2 cup mayo
worcestershire sauce (2-3 dashes)
hot sauce (2-3 dashes)
white sugar (1 pinch)
dijon mustard (1 tbsp)
old bay seasoning - to taste
bread crumbs 1/2 - 1 cup (as needed to bind)
Oil for Frying
Cheesesteak Eggrolls:
1 package eggroll wrappers
12 oz thick cut provolone cheese slices
1 diced onion
1 diced green pepper
1 lb shaved steak
1 egg (egg wash)
vegetable or peanut oil for deep frying
salt, pepper, onion powder, garlic
Aioli:
1/2 cup mayo
2 tbsp sriracha
1 tbsp honey
2 tsp pickle juice (can use ACV as a substitute)
2-3 tbsp ketchup (use this to balance the heat from sriracha and to add color)

1 Rotisserie Chicken
2 oz Cream Cheese
1/4 cup diced onion
1/4 cup diced celery
1 cup franks red hot
1/4 cup ranch dressing (plus more for garnish)
4 tbsps blue cheese crumbles
Eggroll wrappers
salt, pepper, garlic, onion powder
Garlic Paste 1 tbsp
shredded mozzarella
oil for frying
green onions for garnish
sriracha for garnish
Directions:
1. Begin by shredding chicken and removing any skin, cartilage, and bone. Cut into small pieces and add to a large mixing bowl.
2. Add your room temp cream cheese (or warm it in the microwave for 30 seconds) along with the hot sauce, celery, ranch, and blue cheese crumbles. Mix well to combine all ingredients. Season to taste.
3. Grab 1 eggroll wrapper at a time and gently wet the edges with either the egg wash or water (to ensure you get a tight seal). Add your mozzarella cheese and buffalo chicken mixture to the middle (don’t overfill the wrappers!)
4. Wrap the egg rolls tightly and ensure the edges are sealed. Repeat until all are finished.
5. Heat oil to 350 degrees and fry egg rolls in batches (about 4-5 minutes or until golden brown). Slice and garnish with sriracha and ranch if desired and top with green onion.
