Learn to Make an Amazing Italian Antipasto Salad
TANTALIZING ITALIAN ANTIPASTO SALAD RECIPE FROM A FORMER LAS VEGAS RESTAURANT OWNER WHO IS ALL ABOUT CREATING BUDGET FRIENDLY MEALS.
INGREDIENTS
DELI SLICES: 2 Ham, 4 Hot Capicola, 4 Pepperoni, 2 Provolone Cheese, 4 Salami
1 Head Iceberg Lettuce
10 Cherry Tomatoes
1/4 Red Onion Slices
1/2 Shaved Carrot
10 Green Olives
20 Black Olive Slices
5 Pepperoncini
1 Cup Shredded Mozzarella Cheese
Seasonings tsp each:
1/4 Salt
1/4 Pepper
1/4 Garlic Powder
1/4 Onion Powder
1/4 Italian
1/4 Basil
1/4 Oregano
1 TBSP Parmesan Cheese
Ken’s Zesty Italian Dressing
INSTRUCTIONS
Take 2 pieces of Ham and place on a flat surface. Follow that up by adding layers of hot Capicola, Pepperoni, Provolone Cheese and Salami. Next roll your Italian lunch meats together and just like that you’ve created the Goodfellas Antipasto rolls.
Now pull out your most decadent salad bowl and place your cutting board on the counter. Take your head of lettuce and begin chopping that down to the size that you prefer.
Take your lettuce and place in that bowl you chose. It’s time to layer the most amazing tasting salad you’ve ever eaten, not to mention you’ll be the talk of the town at your next party. Add cherry tomatoes, sliced red onions that you sliced to perfection. Spread the shredded carrots that you shaved into small pieces. Place the stars of the dish the Goodfellas Antipasto rolls selectively in the bowl. Follow that by placing those mouthwatering pepperoncinis in your favorite targeted areas. Remember we want this Antipasto to look beautiful, so treat this baby with tenderly love. Next add your sliced black olives and green olives with pimentos. The goal up to this point is to keep our salad dry. We don’t want anything to wet down the family’s salad. You wet this thing down and ruin the Antipasto you might find yourself getting whacked by your best friend or worst yet, a family member. Don’t be arrogant at this point; you’re not a made guy yet.
Here comes the real secret of this gorgeous salad: Top the salad with light sprinkles of seasonings starting with salt, pepper, garlic powder, onion powder, basil, oregano and Italian seasoning. Also add a pinch of parmesan cheese. Whatever you do don’t mix the salad. If you do, I have no doubt you’re gonna be swimming with the fishes.
Optional: Italian croutons added could make this mind blowing and take it right to the top of the summit. That’s, that for now. Until next time “buona notte”.

Our meal starts with the antipasti – the appetizer course, and we’re filling it with fresh and flavorful veggies, herbs, meats, and cheeses.
We’re making, Antipasti Salad.

For the antipasti salad, you’ll need:
Artichoke hearts
Olives (we used black and green garlic-stuffed)
Grape tomatoes
Roasted red peppers, marinated
Cremini mushrooms, quartered
Spinach leaves
Onion (we used red onion)
Salami (we used soprasetta)
Fresh basil
Fresh mozzarella cheese
For the keto Italian dressing, you’ll need:
Extra virgin olive oil
Balsamic vinegar
Lemon juice
Garlic powder
Rosemary
Thyme
Oregano
Shredded basil
Black pepper, freshly ground
Salt
Garnish with flakes of parmesan cheese, pan-roasted pine nuts, pepperoncini, and additional salt and pepper to taste.
