DELICIOUS Anise Biscotti!!!
Learn how to make DELICIOUS Anise Biscotti cookies, quick and Easy!
INGREDIENTS:
6 eggs
1 ½ cup of sugar
1 cup of vegetable oil
2 tablespoons of baking powder
2 tablespoon of anise extract
2 cups of flour
DIRECTIONS
mix eggs, vegetable oil and sugar in mixer for 1 minute
add two tablespoons of baking powder, anise extract and 2 cups of flower
mix for 1 minute
in pre-greased baking sheet pour entire mixture, level if required
bake in oven at 350 degrees for 15minutes
remove from oven and slice into strips about 1.5 inch thick, then slice the opposite way creating 3 sections – refer to video to see how Nonna does it
using a spatula, remove sliced biscotti and separate entire batch between two baking sheets
bake both sets of biscotti for another 10 min at 275 degrees, or until golden

Almond Anise Biscotti (Greek Paximadakia)
Print this recipe here:
4 ounces unsalted butter, softened
1 cup granulated sugar (plus more for garnish)
3 eggs, at room temperature
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
1/4 teaspoon salt
3 cups (450 grams) all-purpose flour
1 teaspoon baking powder
1 cup toasted coarsely ground almonds
1-2 tablespoons anise seeds
Preheat the oven to 350 °F, 180 °C.
Beat the butter with the sugar, salt, almond and vanilla extracts. Beat over medium-high speed until fluffy.
Combine the flour, baking powder, nuts, and anise seeds in a large bowl and mix together.
Add the eggs to the mixer one at a time and beat until combined and fluffy.
Add the flour mixture slowly until incorporated and a dough is formed.
Divide the dough into 2 equal portions and form them into logs (about 1/2 inch thick).
Transfer the logs onto a half sheet baking (13 by 18 inch) tray that has been lined with parchment paper. Sprinkle the tops of the logs with granulated sugar and lightly press the sugar into them.
Bake on the center rack for about 25 minutes until pale golden and the center of the loaves is firm.
Set them aside to cool.
Slice the loaves into about 1/2-inch thick slices cut on the diagonal.
Place the slices onto the baking tray and bake (325°F) for about 15 minutes.
Cool completely and store the cookies in an airtight container.
Serve with Greek coffee and enjoy!

Crisp & Delicious Anisette Biscotti | Great for Dipping!
These Italian anisette biscotti are crispy cookies with a light licorice flavor. I have loved them since I was a child. They go so well with milk, tea, coffee or espresso as they are a great dunking cookie! They are also very easy to make. I encourage you to try the recipe!
Ingredients:
3 Eggs
1 cup Sugar
1 cup Oil (vegetable or light olive oil)
3 cups Flour (all-purpose)
3 tsp Baking Powder
1 Tbsp Anise Extract (OR 2 tsp anise seed OR 2 tsp Anisette liqueur)
1 Egg White for glaze (Optional)
In electric mixer, beat eggs, add sugar and oil Mix.
In small bowl, mix flour and baking powder together. Add in 2/3 of the flour mixture. Add anisette. Spread remaining flour mixture onto board.
Pour mixture in center. Knead dough. Shape into strips and place on
ungreased cookie sheet (I use parchment paper). Flatten strips a little and brush with egg white to make them turn golden brown.
Bake on middle rack on 350 degrees F. for 10-15 minutes (until bottom is light brown). Or place 2 cookie sheets at a time and Convection Bake for 12 minutes. Remove from cookie sheet. Cut diagonally when still a little warm. Place back on cookie sheet and bake again for 15-20 minutes (or 12 min. convection bake) until golden on each side. You need to be close to oven so they don't burn.
Store in airtight container for several weeks or in freezer for months.

12 extra large Eggs
3 cups Sugar (600 g)
3 Tbsp Anisette Liqueur (45 ml)
2 cups Vegetable Oil (480 ml)
1 Lemon – both Juice & Zest
3 Tbsp Baking Powder (30 g)
3 ¼ lbs All Purpose Flour (approx. 10 cups) (1472 g)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

Authentic Anise Biscottis
Ingredients
•3 cups all purpose flour
•3/4 cup granulated sugar
•3 eggs
•1/2 cup vegetable oil
•1 teaspoon baking powder
•pinch salt
•2 teaspoons anise seeds and dry orange peel (optional)
Instructions
In a Medium bowl, sift together flour, baking powder, anise seeds powder and salt salt. Set aside.
In a large bowl, beat the eggs and the sugar gradually and add the oil. Whisk for another minute.
Incorporate the flour mixture. Mix until combined.
Divide dough in half and shape each dough half into 10 1/2-inch-long, 4-inch-wide log. Transfer both logs to prepared baking sheet, spacing apart.
Bake logs until golden brown (logs will spread), about 25 minutes.
Using serrated knife, cut logs on diagonal into 1/2-inch-wide slices. Arrange slices, cut side down, on same baking sheet. Bake 12 minutes. Turn biscottis over; bake until just beginning to color, about 8 minutes. Transfer to rack and cool.
