How To make Italian Anise Biscuit (Biscotti)
-SANDRA PENNER-FOX (RHKJ21B) 1 c Whole almonts
3 1/4 c Flour
2 1/2 tb Baking powder
1/2 ts Salt
6 Eggs
1 c Sugar
5 tb Butter
3 Drops anise oil
Toast 1 cup whole almonds in oven at 350~ for 15 mins. Sift together flour, baking powder and salt. Set aside. Beat eggs, sugar. Add butter andl. (The oil can be purchased at any drug store. Ask the pharmacist. Don't use the anise extract) Add the flour mixture. When mixed well, add the toasted almonds and mix well. Shape into loaves on a cookie sheet and bake at 350" for 20 mins. Cut into slices and brown on both sides 5 to 6 mins, turn and toast the other side. We toasted them for about 15 to 17 minutes. Remember to turn them! You can use hazelnuts, walnuts or almonds. We prefer the whole toasted almonds! Note: The dough is sticky...almost soupy. On the second batch we made of these, I put flour on the cookie sheet and poured the dough out on the cookie sheet I was going to bake it on and shaped it on it, brushed off the excess flour and baked it. It was much easier. The loaf should be about approx. 12" long and 3" to 5" wide. I am sorry about the way this is written, but I took the recipe off of a T.V. show. -----

These anisette cookies are a family tradition in our house! Here's the recipe - These anisette cookies are a holiday dessert favorite!
Italian Anisette Cookies
These wonderful Anisette Cookie brings back fond memories of my grandmother in her kitchen! She would make them during Christmas and Easter. They are light , sweet and great to enjoy with an Espresso!
Even though there are several steps to making these delicious cookies they are still fairly easy to prepare. Mixing and shaping them will take a small amount of time but it will be well worth your effort ! If you want to save some time just roll them into a ball and place them on the baking tray. This is easier but not as authentic . You may not need to use all of the 3 Cups of flour so be sure to add it in a little at a time. Also some Anisette cookie recipes are made with butter but this recipe uses Canola Oil .
Also, adjust the Anise extract if you want a milder flavor and if you like you can use vanilla extract in the icing.

3 Cups Unbleached Flour
3 Teaspoons Baking Powder

Authentic Anise Biscottis
Ingredients
•3 cups all purpose flour
•3/4 cup granulated sugar
•3 eggs
•1/2 cup vegetable oil
•1 teaspoon baking powder
•pinch salt
•2 teaspoons anise seeds and dry orange peel (optional)
Instructions
In a Medium bowl, sift together flour, baking powder, anise seeds powder and salt salt. Set aside.
In a large bowl, beat the eggs and the sugar gradually and add the oil. Whisk for another minute.
Incorporate the flour mixture. Mix until combined.
Divide dough in half and shape each dough half into 10 1/2-inch-long, 4-inch-wide log. Transfer both logs to prepared baking sheet, spacing apart.
Bake logs until golden brown (logs will spread), about 25 minutes.
Using serrated knife, cut logs on diagonal into 1/2-inch-wide slices. Arrange slices, cut side down, on same baking sheet. Bake 12 minutes. Turn biscottis over; bake until just beginning to color, about 8 minutes. Transfer to rack and cool.

A quick walk through of how to make anisette biscotti, an Italian cookie recipe.
INGREDIENTS
3 large eggs
1 cup white sugar
1 cup vegetable oil
2 tsp anise extract
3 tsp baking powder
2 1/2 cups all-purpose flour
INSTRUCTIONS
Beat the eggs, sugar, oil, and anise extract together in a large mixing bowl.
Combine the flour and baking powder together in a separate bowl.
Add the flour mixture to the egg mixture a little at a time while mixing until all the flour is incorporated into a soft dough.
Cover with food-safe plastic wrap and refrigerate for a minimum of 30 minutes.
Heat oven to 350 and prepare a baking sheet lined with parchment paper.
Remove dough from the fridge and divide into 2 or 3 portions. Form each portion into a thick log and place onto a baking tray.
Bake for 25 minutes or just until they begin to turn a golden colour.
Remove from the oven and as soon as you can touch the loaves, carefully transfer to a cutting board and cut them into diagonal strips.
Place them back on the baking pan and bake for another 10 minutes.
Remove from oven and let cool.
