How To make Angel Hair Pasta with Lemon and Garlic
1 ts Olive oil 2 Garlic cloves, peel & mince 1/2 c Dry white wine 1/4
c Lemon juice 1 c Tomato, chopped (1 medium) 4 oz Spinach angel hair pasta - dried 4 oz Semoliina angel hair pasta - dried 1/4 c Fresh basil, chopped 2 tb Parmesan cheese, grated Black pepper Bring a large pot of water to a boil over high heat and maintain at a boil. Put the olive oil and garlic in a saut. pan and cook over medium heat just until the garlic begins to brown. Remove the saut. pan from the heat and pour in the wine. Return it to the heat. Cook for another 1 to 2 minutes, until the wine has been reduced by half. Stir in the
lemon juice and tomato. Remove the pan from the heat. Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute. Drain the pasta and put it into a warm serving bowl. Add the basil, Parmesan cheese, and black pepper, along with the tomato mixture. Toss and serve immediately. Fat per serving = 4.1 grams Calories per serving = 291 Delicate angel hair pasta demands a light and elegant sauce, such as this simple white wine mixture flecked with bits of fresh tomato and basil. It's a terrific first course of luncheon dish. I find the spinach and semolina varieties to be somewhat sturdier than plain wheat-flour angel hair pasta, but you still need to handle them carefully. Cook for only 30 seconds to 1 minute, toss, and serve immediately. I prefer dried pasta to fresh for several reasons, not the least of which is that it lacks the fat and cholesterol of the fresh variety, which is made with eggs. Better-quality dried pastas can be purchased in a seemingly endless range of flavors--usually at a fraction of the price of fresh. They hold up to the most robust of sauces and are simpler to cook. If you use fresh pasta, be sure to separate the strands before adding them to the pot so tht they don't stick together while cooking. Time carefully. Fresh pasta is done in 3 to 5 minutes and can be overcooked easily. 1 Tablespoon of Butter
Freshly Cracked Black Pepper
3 Cups of Liquid Chicken, Beef or Vegetable Stock (750ml)
250g of Angel Hair Pasta (or similar thin, quick cooking pasta)
1 Cup of Grated Parmesan Cheese
3/4 Cup of Cream
1 Tablespoon of Freshly Chopped Parsley

✅Ingredients
• 1 pound angel hair pasta
• ½ cup unsalted butter
• 2 garlic cloves, peeled and halved
• ½ cup parmesan cheese, freshly grated
• optional minced chives or parsley, for garnish
✅Instructions
1️⃣ Cook pasta in salted water according to package directions.
2️⃣ Meanwhile, melt butter in a small saucepan over medium heat. Add in garlic cloves. Continue cooking over medium heat until butter foams, giving the pan a good occasional swirl. Once butter foams keep a close eye on it. The color will change from yellow to tan and then to brown. Once it reaches brown, remove it from the heat immediately and pour over the cooked pasta, discarding the garlic cloves.
3️⃣ Stir in parmesan cheese until melted. Serve hot with some minced chives or parsley.

Lemon Capellini

Ingredients
Kosher salt and freshly ground black pepper
1 pound dried capellini
1/2 pound (2 sticks) unsalted butter
Zest and juice of 2 large lemons
1 lemon for garnish
Directions
Add 2 tablespoons of salt to a large pot of boiling water. Add the capellini and cook for 3 to 4 minutes, until just al dente.
Meanwhile, heat a large (12-inch) saute pan, add the butter, and heat until the butter is melted. Add the zest and juice of the 2 lemons. Add 2 teaspoons salt and 1 teaspoon pepper and swirl the pan to combine.
As soon as the pasta is cooked, lift the pasta out of the water with tongs, allowing most but not all of the water to drain back into the pot, and add all the pasta to the sauce. Cook for one minute, adding pasta water to the sauce with a ladle just enough to keep the pasta moist.
Transfer the pasta to a serving platter or individual plates. Garnish with more lemon zest, sprinkle with salt and pepper, and squeeze a little lemon juice on top. Serve hot.
