How To make Amish Sugar Pie
1 Unbaked 8" pie shell
1 c Brown sugar
3 tb Flour
1/4 ts Salt
1 1/2 c Evaporated milk
3 tb Butter
Cinnamon to taste The following is a Sugar Pie recipe that came from Northern Indiana and is an old Amish recipe. It is very, very good - and different. Preheat oven to 350F. In a small bowl blend together the sugar, flour and salt. Spread in bottom of pie shell. Pour the milk over the sugar mixture, but do not stir. Dot with the butter and sprinkle cinnamon over all. Bake for 50-60 minutes, or until filling bubbles in center.
This will not be a firm custard, so don't despair if it doesn't look like the custard pies you are accustomed to! Pie is best served at room temperature.JM. From Peggy Makolondra <pmakolon@mail.wiscnet.net> -----

If you love or even remotely like pecan pie, then you definitely need to try this classic Amish oatmeal pie. While you might read that and wonder why the heck we’re putting oatmeal into a pie – hang in there with us! – it’s actually a surprising, but amazing substitution that goes back to the 1800s. At certain times in history, during the Civil War, for example, pecans and other nuts were very expensive and hard to find, and people needed to come up with creative, new ways to make delicious desserts…and thank goodness for their innovation, because otherwise we wouldn’t have this tasty, pecan pie-esque Amish pie.

Classic Sugar Cream Pie
While we all know and love a good cream pie, typically our options are limited to banana cream or coconut cream when we see them on restaurant menus. We have absolutely nothing against either of those classics, but when we got a craving for cream pie the other week we knew we wanted to make something that’s just as classic but not quite as standard as the aforementioned desserts: sugar cream pie!
This recipe makes a creamy, custardy pie that has a lovely “crust” on top that crackles slightly as it cooks, which gives it some visual interest and makes it even yummier. If you’re looking for something indulgent, without being over the top, this is the perfect dessert. It’s a departure from the norm, all the while being as close to comfort food as it gets. You can’t go wrong!
