Chocolate Chunk Banana Bread is sweet, thick, fluffy, and, dare I say, moist. ????This recipe is my absolute favourite! Now there might be a lot of banana bread recipes out there, still, this one is exclusive and one of the best loaves I have ever made using super nutritious and healthy chickpea flour.
Ingredients:
1/2 cup butter, softened
6 tsp castor sugar
1+1/2 cup mashed bananas
3/4 cup milk
2 cups chickpea flour
1 tsp baking powder
1/2 tsp baking soda
1 teaspoon cinnamon powder
1/2 cup crushed walnuts
1/2 cup chocolate chunks
Method
1. Pre-heat the oven to 180C. Line a 9” X 4” loaf pan with parchment paper
2. In a bowl mix butter and sugar, until the mixture is fluffy.
3. Add in the mashed bananas and milk to it and mix it well.
4. Now sift in the chickpea flour, baking powder, baking soda and cinnamon powder.
5. Make sure you do not over mix.
6. Fold in the crushed walnuts and chocolate chunks. The batter will be thick.
7. Transfer the batter into the prepared loaf pan and bake at 180C for 40-50 minutes.

INGREDIENTS
Dough:
440g (3 ½ cups) Cake flour
150g (¾ cup) Sugar
5g (1 tsp) Dry yeast
100g (¾ cup) Powdered milk
6g (1 tsp) Salt
250ml (1 cup) Warm water
Vanilla – 1 tsp / 5g
110g (½ cup) Butter
Filling:
210g (1 ¾ cup) Cake flour
150g (¾ cup) Sugar
25g (2 ½ tbsp) Cocoa
3g (½ tsp) Salt
1 Egg
Water – 3 Tbsp / 45g
30g (2 tbsp) Butter
5g (1 tsp) Baking powder
METHOD
For the dough: In a bowl add flour, dry yeast, sugar, powdered milk and salt. Mix it a little and then add warm water and vanilla. Mix it and add butter and knead it well. Let it rest for a while.
For filling: In a bowl add flour, cocoa, sugar, baking powder and salt. Mix and add egg and butter. Knead it ad let it rest.
Divide the dough into 20 balls and save then for later. Repeat that procedure with filling.
Spread the dough ball add the filling ball. Merge them and spread it. Incise and then roll them. Put them onto a baking pan. Coat them with egg. Bake them at 170C for 15 minutes.

Fluffy Milk Bread Recipe / Chocolate Milk Buns :
- 400 gr All Purpose Flour ( 2 3/4 cup)
- 4 1/2 tbsp Sugar
- 7 gr Dry Yeast ( 1 packet)
- 3/4 tsp Salt
- 240 gr Warm Milk ( 1 cup )
- 35 gr Butter (1/4 stick)
- 20 gr Dark Cocoa Powder ( 2 3/4 tbsp)
- 2 1/2 tbsp Milk
PLEASE READ: As mentioned in the video the cocoa buns don't contain enough cocoa to taste of chocolate. The intense chocolate flavor comes from the filling! For the chocolate filling you can either use Nutella OR Chocolate Ganache. If you choose to use chocolate ganache, here is the recipe:
- 150 gr Chocolate ( 5.5 ounces)
- 100 gr Cream ( 3,5 ounces)
Melt together. Then refrigerate for 1 hour and form small chocolate truffles using your hands, then pop in the freezer for 30 min. You can make these ahead of time ( up to 2 weeks )
Dust with Powdered Sugar

INGREDIENTS:
7 inch bundt pan
Grease butter
Keep aside
Bread 4 slices
Cut into pieces
Cocoa powder 4 tbsp
Sugar 1/2 cup
Agar agar/gelatin powder 2 tbsp
Milk 3 cup
Mix well
Blend until smooth
Transparent into a pan
Keep stirring
Cook until boil
Vanilla essence
Mix well
Keep it in the fridge for 2 hours or until set
Insert tooth pick
Sprinkles
NOTE: 1 CUP = 250 ML
