4 tb Meringue powder
1/3 c Water
1 tb Flour
1 c Sugar
2 ts Cinnamon
1 ts Vanilla
1 Lemon rind; grated
1 c Raw almonds; ground fine
Recipe by: Tampa Bay Online Preheat oven to 325 degrees. Mix meringue powder and water. Whip until stiff. Combine remaining ingredients; fold gently into whipped meringue. When thoroughly combined, break off small pieces of dough and roll into balls. Flatten them so they look like thick discs and place on greased cookie sheet. Bake 30 to 35 minutes. Note: Check cookies at 25 minutes and watch closely so they don't get too brown. Makes about 6 dozen cookies. -----

⚪️Ingredients you will need:
- 5x Egg Whites
- 550g Almond Flour
- 200g + 50g Sugar
- 1tsp Vanilla Extract
- 1tsp almond extract
- 2 tsp Amaretto
- 2g Lemon Zest
- 70g Powdered Sugar

⚪️Instructions if you need it:
1. Whisk the egg whites until they get foamy
2. Gradually add the 50g of sugar until the meringue has soft peaks
3. Mix the almond flour with the 200g left of sugar
4. Add half of the dry mixture to the meringue
5. Carefully fold it in
6. Add in the zest, the extracts and the amaretto liquor to the mix
7. Add the rest of the dry mixture and fold
8. When you get a thick paste, it is ready
9. Form 30g balls of dough
10. Roll them in the icing sugar and place them on a baking sheet
11. Bake at 325F for 20minutes
12. Let them cool down and Enjoy ;)

These Italian almond cookies (a.k.a. soft amaretti or amaretti morbidi) appear in my kitchen very often because they’re quick and easy to make, they taste delicious (especially if you love the almond flavor) and they require 3 basic ingredients (egg whites, almond flour, sugar), plus some aromatics and a pinch of salt.
In Italian, the word amaretti is derived from the word amaro, which means bitter. And so in order to get the true authentic taste of an amaretti, you must use ground bitter almonds or replace them with bitter almond extract. Luckily, most almond extracts have already bitter almond extract as their base because that’s what gives them their intense scent.

TIP: Use room temperature egg whites because they will whip up much faster.

- 4 Large Eggs
- 2 Cups of Sugar
- 6 Cups of Grated Almonds
- 1 Cup of Plain or Roasted Almonds
- 1 tsp of baking powder
- 1 small bottle (43 ml) of Almond Extract
- 1 Tbsp of Coco
- 1 bag of Icing Sugar
- Baking Sheet
- Parchment paper
Preheat oven to 350 Degrees. Bake cookies at 350 degrees for 10-12 minutes or when bottoms are golden brown.
