Italian Almond Biscuits (Riciarelli)
Called Riciarelli or Brutti ma Buoni (“Ugly but good” in Italian!), these Italian Almond Cookies are chewy on the inside, filled with wonderful almond flavour, and studded with dried cherries. They keep for 10 days, and because they're gluten free, everybody can enjoy them!

Melt-In-Your-Mouth Italian Lemon / Limoncello Amaretti - Almond Cookies (e87)
Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti - (everybody's grandma), bakes up an incredibly easy, but absolutely delicious, gluten-free, almond-based cookie, referred to as amaretti. There aren't many ingredients and the process is rather simple. You and your family are going to love these!
Ingredients:
- 4 cups of almond flour (about a pound)
- 1 cup of granulated sugar
- 3 egg whites
- tsp of lemon juice or limoncello
- zest from 2 lemons (about 3 TBSP)
- pinch of salt
- 1 tsp of baking powder
- icing (powdered) sugar for rolling the cookies
- granulated sugar for rolling the cookies
In a mixing bowl, combine all the dry ingredients. In a standing mixer, or using an electric hand mixer, whip up the egg whites until soft peaks form. Blend the egg whites with the dry ingredients, adding in the lemon juice and or limoncello. The consistency should be dense and form a ball when you scrunch your palm.
Using water on your palm to reduce stickiness, begin rolling consistently-sized, small balls, then roll through the granulated sugar and finally through the powdered sugar. Place on a parchment-lined tray.
Preheat oven to 325 F and bake for about 15 minutes. Place on a cooling rack. YIELD: 36

INGREDIENTS
Almond Flour - 100 grams or 1 cup
Powdered Sugar (sifted) - 125 grams or 3/4 cup
Salt - a pinch
Egg White - 1
Almond Extract - 1/8 tsp
Vanilla Extract - 1/8 tsp
Oil - For Greasing
1 cup measures 250 ml
Method
1- Take almond flour 100 grams. You can make it at home too. Grind 100 grams almonds and pass through the sieve. Make sure not to grind them more as it can end up into almond butter.
You can also use blanched almonds. But make sure to dry them before grinding. Or the best way is to get the almond flour.
2- 125 gram powdered sugar. You can grind caster sugar into fine powder and mix with almond flour.
3- Mix a pinch of salt. Our dry ingredients are now mixed up.
4- Take 1 egg white. Add 1/8 tsp almond extract and 1/8 tsp vanilla extract to it. Whisk it until it turns foamy.
5- Properly mix up the dry ingredients and egg white mixture.
6- Cover the material with a cling paper and refrigerate for 30 min.
7- Grease the butter paper with oil that we are going to use for baking.
8- Grease the hands with oil and make fine balls as shown in the video.
9- Bake at 160°C for 30 minutes.
10- Let it cool and amaretti cookies

DESSERT MANDORLE E ARANCIA???? pasticcini facili e morbidissimi Gluten free????ALMOND AND ORANGE DESSERT
Un pasticcino è gradito in ogni momento della giornata, se poi sono dessert alle mandorle ancor di più!
Io li faccio spesso perché li amo molto, amo la consistenza della pasta di mandorle e quel sapore di mandorle che li rende unici! Li ho fatti in vari gusti, guarda qui ????
Oggi al gusto Arancia, visto il periodo!
Rifateli sono strepitosi e si conservano morbidi per più giorni, basta tenerli in una scatola di latta!
