How To make Alsatian Onion Pie
2 tb Oil (he recommends corn)
3 lg Onions; finely diced
1 c Soy milk
1/3 c Firm tofu; crushed by hand
1 1/2 ts Sea salt
1/4 ts Black pepper
1/8 ts Nutmeg
2 tb Unbleached flour
1 tb Couscous
1 Wholewheat pie shell
-in a 10-inch tart shell Saute onions in oil (I added 1/2 cup water to prevent burning, or you could substitute water for the oil to reduce fat), until translucent and mostly soft. Blend the soy milk, tofu, salt, pepper, nutmeg, and flour until smooth. Then combine the onions, the soy milk mixture and the couscous. Pour into the prepared pie shell. Bake in a preheated oven at 350 degrees F for about 30 minutes.

Schwabian Onion Cake or Schwäbischer Zwiebelkuchen is a tradtional Fall meal, enjoyed with a very young wine from the actual years harvest. We call that wine Federweißer and it is sold in open bottles at the cooling section of the grocery.
Onion Cake is great as a party food or for a little get together with a few friends for a nice evening in good company.

This tart makes for a perfect quick snack, or even a full fledge meal. Serve while still warm; with salad or similar.
Preparation time: 20 minutes
Baking time: 40-50 minutes
Servings: 6-8
Ingredients:
- 1 puff pastry to fit a 9-10 inch / 23-25 cm pie pan
- 4 medium to large onions, sliced
- 2 tablespoons of butter
- 2 teaspoons of cumin
- 3-4 eggs, depending how large they are
- 1 cup / 240 ml of light cream
- salt, pepper to taste
Step-by-step guide:
- Slice the onions and sauté them in butter until tender and translucent, about 15 minutes; preheat the oven to 180°C / 355°F.
- Add 2 teaspoons of cumin; add salt, pepper to taste and mix well.
- Whisk the eggs and incorporate the light cream; add salt and pepper to taste.
- The onions should have cooled down by now; incorporate them into the egg and cream mixture.
- Roll out the puff pastry and line a pie pan with it; fill it with the onion mixture.
- Bake for 40-50 minutes at 180°C / 355°F, or until deep golden brown.
- Let cool for 5 minutes and serve while still warm!
