How To make Alsatian Onion Pie
2 tb Oil (he recommends corn)
3 lg Onions; finely diced
1 c Soy milk
1/3 c Firm tofu; crushed by hand
1 1/2 ts Sea salt
1/4 ts Black pepper
1/8 ts Nutmeg
2 tb Unbleached flour
1 tb Couscous
1 Wholewheat pie shell
-in a 10-inch tart shell Saute onions in oil (I added 1/2 cup water to prevent burning, or you could substitute water for the oil to reduce fat), until translucent and mostly soft. Blend the soy milk, tofu, salt, pepper, nutmeg, and flour until smooth. Then combine the onions, the soy milk mixture and the couscous. Pour into the prepared pie shell. Bake in a preheated oven at 350 degrees F for about 30 minutes.

This escoffier style onion tart is an absolute blast from the past. It uses a soubise puree as a filling (which is based of béchamel and pureed onions) which is then cooked in a pie crust and served Luke warm.

INGREDIENTS:
400 grams of home made short crust pastry (or one roll of pre-made shortcrust pastry)
600 to 700 grams of finely sliced onions.
150 grams of butter (100 grams to cook the onions and the rest after adding the béchamel)
salt and pepper to correct the seasoning at then end
1 or 2 tablespoon of heavy whipping cream (double cream) 37% fat content
For the Bechamel:
60 grams butter (for the roux)
60 grams plain flour (for the roux)
500 ml whole milk (full cream)
1 teaspoons of salt
1 pinch of black pepper
2 or 3 pinches of grated of nutmeg
1 small bay leaf
Notes: the shortcrust has to be blind baked before it can filled with the béchamel mix.
to process the onions with the béchamel you will need a stick blender or food processor.

Ingredients:
For the meat mixture:
2 pounds (1kg) ground lamb
1 large onion, chopped
3 garlic cloves, crushed
3 tbsp olive oil
4 tbsp (30) flour
1/2 tsp salt
1/2 black pepper
1 tsp rosemary
1 tsp thyme
1 tbsp tomato paste
2 cups beef broth
7oz (200g) carrots
7oz (200g) peas (fresh or frozen)
For the puree:
3.5 pounds (1.5kg) potatoes
1 tbsp butter
1/2 cup (120ml) milk
1/4 cup (25g) cheddar cheese
1/2 tsp salt
1/2 black pepper
egg yolk
Directions:
1. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender.
2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes.
3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir.
4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens.
5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth.
6. Preheat oven to 400F (200C).
7. Layer the meat mixture in a 13X8.5 (33X22cm) ovenproof dish. Spread the puree over the meat mixture.
8. Bake 20-25 minutes. or until mashed potato is golden brown.
