The Sausage and Peppers Recipe I learned at my FIRST restaurant gig
This easy-to-make Italian Sausage and Peppers recipe comes together in under 30 minutes and is jam-packed with onions and mushrooms in a marsala sauce. You will love this few-ingredient dish that the entire family will enjoy.
Sausage and Peppers is a classic American-Italian dish consisting of Italian sausage cooked with peppers and onions. It is said to have gained popularity at Italian street festivals in the 1920s for the Feast of San Gennaro.
While there is no original precedent for the exact ingredients in this dish, it has since been altered by all who make it. Nowadays, you will see the sausage and peppers cooked in a red sauce or in a brown sauce, which is what I did. Ingredients such as garlic or mushrooms can be added to the dish as well. It is a fantastic recipe if you are looking for something quick and delicious to serve or need to feed a lot of people at one time.

Ingredients for this recipe:
• 3 tablespoons olive oil
• 8 Italian Sausage Links
• ½ peeled and julienne red onion
• 3 cups sliced cremini mushrooms
• 1 seeded and julienne red bell pepper
• 1 seeded and julienne yellow bell pepper
• 1 seeded and julienne green bell pepper
• 2 finely minced cloves of garlic
• 2/3 cup marsala wine
• 4 cups of good beef stock
• salt and pepper to taste
• parmesan cheese for garnish

Recipe:
Brown 3 Italian Sausages in a skillet then set aside.
Dice 2 Bell Peppers and half a white onion and saute in the same skillet.
Mince 4 cloves and garlic and add.
After all have sweated down, add 8-12 ounces of chicken stock.
Then add 2 diced Tomatoes.
add 4 tablespoons Tomato paste.
Salt and Pepper, Italian seasoning, oregano and red chili flakes.
Cut the sausages into bite size pieces and add back into the sauce pan.
Cover and simmer for 20 minutes.
Serve with Cheese and Basil.

Italian Sausage and Peppers
This dish is a great “quick fix” for busy days. Easy and versatile, you can customize this meal using different types of italian sausage (including plant-based for a vegetarian option), and even change the way it’s served. While featured as a sandwich, it can also be served over pasta, polenta, steamed rice, or simply eaten on its own!
Ingredients:
1 Tablespoon olive oil, divided
4 italian sausages (sweet or spicy, other options include pork, turkey, and plant-based)
3 bell peppers, seeded and cut into strips (featured: green, orange and yellow peppers)
1 large onion, cut into strips
2 cloves garlic, diced
1 can tomatoes, drained (whole or diced tomatoes work best for this dish)
2 teaspoons italian seasoning
Salt (to taste)
Pepper (to taste)
4 large sausage buns (featured: Portuguese rolls)
Method:
Over medium-high heat, warm half of the oil in a large pan until it begins to ripple. Add sausages, browning on 2 sides (do not cook them through, simply brown them for more flavor). Remove sausages and reserve. Add remaining oil into the pan and add bell peppers and onion, scraping the pan to remove browned sausage juices. Season lightly with salt and pepper to enhance flavours as the vegetables cook. Once onions have softened slightly, add garlic and cook for 1-2 minutes. Add tomatoes (break whole tomatoes into bite-sized pieces using a spoon), Italian seasoning, salt, pepper, and reserved sausages, nestling them down into vegetable mixture. Reduce heat to low and cover with a lid, leaving lid slightly tilted to allow steam to escape. Simmer for 20 minutes, or until sausages are cooked through.
Serve stuffed inside buns.
