How To make Almond Slices
3/4 c Sugar; (3/4 to 1)
2 c All-purpose flour
1 c Brown sugar, packed
2 Eggs; beaten
2 ts Baking powder
2 ts Almond extract
3 c Almonds; chopped
1/3 c Oil
2 ts Water
1 ts Cinnamon; optional
Mix all together, shape into flattened logs, brush top with beaten eggs (not those included in recipe). Bake 350 degrees for 19 - 25 min. (watch carefully). Cut while warm. Jo's Note: I think this is a little too much almond extract. I would try about 3/4 teaspoon. -----

Almond Slices | Like A Bakewell Slice, But BETTER!
This almond slice recipe is a take on the traditional English Bakewell slice, but I've substituted the pastry base with a buttery shortbread biscuit base! Atop this shortbread base sits a delicious and inviting raspberry jam layer, followed by a layer of frangipane sponge, and finished with a sprinkling of flaked almonds!
It's the perfect treat all year round and a new favourite amongst my family and friends!! If you don't like raspberry jam, feel free to experiment with other flavours of jam! Apricot jam would be amazing in these slices!
