How To make Almond Crush Cookies
3 c Flour
1 ts Baking soda
1 ts Salt
1/2 ts Cream of tartar
1 c Sugar
1 c Brown sugar; packed
3 3/8 c Butter
2 Eggs
1 ts Vanilla
1 c Almonds; chopped
In a large bowl, combine all ingredients except almonds. Blend well with a mixer. Stir in almonds, mix thoroughly. Chill for several hours. Shape dough into balls. Place on ungreased cookie sheet. Bake 8-10 minutes at 400~F. Cool.

Amaretti cookie recipe, an Italian delight made from Almond flour, lemon zest, egg white all fused to perfection to give a light, crunchy cookie, moist and soft from the inside, low on sugar with only 4 - 5 gr of sugar per piece, a wonderful dessert treat that can be prepared in less than 10 minutes.
The ingredients for our recipe are:
1/2 kg of almond flour
5 egg whites
pinch of salt
2 lemon zest
30 gr of sugar
15 gr of honey
30 gr of powdered sugar (for decoration)
30 gr of almonds, lightly crushed
In a small bowl we lightly mix the eggs with the salt, then add to the almond powder, the sugar, the lemon zest and the honey, and knead well till we have a perfectly moist dough.
We shape into round balls, top with the crushed almonds, sprinkle with the powdered sugar, then bake into preheated oven at 180 C for 15 - 17 minutes. Once cold, we serve on a platter, and we enjoy with our coffee.

WHITE ALMOND COOKIES
The nutty flavor of the almonds compliment the sweet cookie perfectly.
Recipe:
Lam Soon Shortening Blue 120g
Icing Sugar 100g
Fine Salt 1/2tsp
All Purpose Flour 220g
Corn Flour 180g
Toasted Almond Flakes 200g
Daisy Corn Oil 70g
Method:
1. Beat LS Shortening with sifted icing sugar until creamy.
2. Mix well with salt, flour, corn flour and crushed almond flakes.
3. By now, the mixture will be crumbly.
4. Mix in Daisy Corn Oil to form a dough.
5. Roll out the cookie dough between 2 pieces of parchment paper until about 1cm thick.
6. Use a 3cm diameter cookie cutter to chop the cookies.
7. Bake in a preheated oven at 175°C for about 25 minutes.
Tips:
1. If the cookie dough is too wet, you can dust it with some flour.
